Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

After reading all the feedback. I noticed the most common negative remark was about how long it took. Well guess what? I prepared it in 5 mins and cooked it for an hour or so. I placed the peacans in a food processor, the onions too, I doubled the broccoli, sourcream and cream cheese and proceeded to cook all in the sauce pan. I cut up boneless chicken breast as ingredients were cooking in sauce pan, placed chicken breast chunks in casserole, poured sauce ingredients over the chicken. Wa-La! Done. I ommitted the bread crumb step and had a tasty sauce with chicken which I served over rice. Awesome!

Mom's Baked Beans II

PERFECT! I put the beans in the crock-pot (instead of baking) and dumped all the ingredients in. I used 'real bacon' bits from the salad isle and served with ham rather than add the ham in with the cooking. I used these at a Christmas Kids Party - There wasn't anything left! Just as good as those Southern Baked Beans - if you like the sweet taste, you'll love these!

Ground Beef 'n' Biscuits

Super Quick and Super Tasty! There is some concern about the uncooked biscuits on the bottom, my suggestion is to use biscuits that are not jumbo sized and make sure they are BROWNED on top before removing from oven. We used the jumbo size and cooked a little longer, some doughy-ness but it didn't bother us a bit! We loved this recipe and will use again and again. Like I said before EASY & TASTY!

Nut Butter Balls

Yes! These are absolutely NUT BUTTER BALLS! I followed the directions exactly. Made 9 dozen (that's 108 cookies, recipe actually made more so don't be afraid to make them a little bigger) for a Cookie Exchange Party for the Holidays. They are just like I remembered as a child. I used the vanilla extract and used less walnuts (finely ground) as a reviewer suggested. RICH with butter ~ DELICIOUS not too sweet ~ THE BEST combination of butter, powdered sugar and walnuts!

Easy Mandarin Orange Cheesecake

I used store-bought pie crusts to save time! This is an awesome treat and yes it doesn't take long at all. If it seems too thin even though you went by the directions, just wait! When it sets in the fridge awhile it will be just fine!

Simple Salmon Chowder II

This was the best chowder ever! So easy and very delicious! My husband doesn't usually like seafood chowder, in fact when he dished it up I noticed no salmon. When I asked him to try it, he did, reluctantly. He had three bowls and took some the following day to work! He said he couldn't wait for lunch because he kept thinking about that chowder. This definately a 5 star recipe! Thanks!

Minted Rice Casserole

I thought this rice recipe was great. I used it with my Lamb Rack on Easter. It wasn't too minty as was suggested by another. I did cut down a bit on the mint just to stay safe. I added mint jelly to the table and the combination with the Lamb was great!

Perfect St. Patrick's Day Cake

Follow the directions exactly and you will have the perfect, decadent chocolate cake ever! It was my birthday cake, which was, you guessed it, on St. Patrick's Day! Even if we are not celebrating St. Patrick's Day this will be a favorite of my family for a long time.

Curried Apple and Leek Soup

I used all the ingredients as specified (except I used Free-range Organic Chicken Broth), chopped in my VitaMix before cooking then pureed after cooking. This may seem like a lot of extra effort ~ It was worth it! All the ingredients blended very nicely together. Nothing over powering. Nice texture and flavor. We used our dollop of plain yogurt and served with fresh homemade rustic biscuits (daughter's recipe) and ice tea. Simple meal, very filling and will have again!

Asian Noodle Bowl

Oh my goodness, this was exactly what I was looking for. Great flavor combinations. I have used this recipe so many times because my family loves it so much. I have to make larger batches because they insist upon left-overs. I tend to add more vegetables than suggested and upon serving I add some bean sprouts and lettuce to the bowl (on top) and then sprinkle with a sweet chili sauce. This is a super recipe and very easy to make. Thanks!
