Japanese Zucchini and Onions

YUM! I have never been so satisfied with someone else's recipe before. This tasted just like you would order from a Japanese restaurant. Sesame seeds added a great nutty flavor. We had bought garlic-flavored teriyaki sauce already to use on grilled salmon, so this went perfectly. Thanks!

Jo's Rosemary Bread

Finally! My bread machine will not go unappreciated! The Hubs said this was just like Macaroni Grill (I haven't been enough times to recognize it). I substituted 1 t. bread machine yeast and it turned out perfectly. Next time, I think I would add a little more Italian seasoning and perhaps some garlic. There were no doughy patches in the middle of the loaf, it rose beautifully and gave me the confidence to bake again! Well done, Jo!

Gingerbread Boys

Delicious! I did omit the orange zest and substituted 3T of molasses, as some reviews suggested. I had no trouble rolling these out w/ my non-stick rolling pin and at 8-9 minutes in the oven, they came out chewy and delicious. I find that using parchment paper works perfectly. I might add some extra clove or perhaps some black pepper next time, just to amp up the spice factor, but this is a great standard recipe that I have made multiple times already!

Baked Ziti with Sausage

I wasn't sure what to expect from this recipe, as the ingredients suggested it might be a little bland. I am so glad we tried it! We used turkey sausage instead of Italian and omitted the onion (we didn't have any). It was very flavorful and creamy. What leftovers we had were gone in a day or so, and my husband never eats leftovers! It's a great standard that you can play around with.

Coconut Macaroons II

I make these every year at Passover and they never fail to impress. I omit the almond extract and add mini chocolate chips. Everyone at work always asks me when I'm bringing them in again! The mixture is very sticky, but I bake them on parchment paper and let them cool a bit before moving them to my cooling rack and I've only rarely had one fall apart due to the heat. (I accept these as worthy offerings.)

Blueberry Pie

This was excellent and did not run AT ALL. The only changes I made were to increase the cornstarch to 4-5 Tbsp (as many of the reviews suggested) and to add a splash of lemon juice. I made this early on and let it cool all day. By dessert time, it was perfect and each slice held its shape perfectly. I used fresh blueberries and store-bought crust.

Six Can Chicken Tortilla Soup

I gave this four stars because I didn't follow the recipe exactly. My husband and I thought it was okay as is, but excellent with our changes. First, I substituted one can of chicken broth for cream of chicken soup, as many of the reviews suggested. Second, I added a medium-sized jar of mild salsa (or homemade if you have it) and that is what really brought the whole thing together. Third, we grill our own chicken or use leftovers from the night before. Fourth, chop up a zucchini and let it simmer until cooked through. The spiciness was definitely perfect and there was just enough of everything. Addition of the zucchini makes it super filling! This is a weekly staple at our house now. Thanks so much!

Jelly Doughnuts

The dough turned out amazingly well, better than bread usually turns out in this machine. Not too sticky (unless I halved the batch) and beautifully seasoned. (I did use cinnamon instead of nutmeg and 2t instant yeast instead of active dry. However, I had a problem when it came to frying them. Perhaps it was just me and the fact that I didn't have a fry thermometer, but whether I made doughnut holes or full on doughnuts, they were still doughy in the middle by the time the outside was done. The jelly ones turned out a little better because we had to stretch the dough out and that made it a little thinner. Like I said, maybe that's because I've never really deep fried anything before. Because the ones that were all the way cooked were WONDERFUL.

Buttery Rolls

The texture was beautiful and the dough wasn't too sticky or too dry. However, they seemed really bland, like they needed more salt. Perhaps my calculations for halfing the recipe were off (how on earth do you measure out 1/8 cup???) but after buttering these and sprinkling them with a little extra salt, they were very good. I'd play around with them again, but definitely have plenty of salt close at hand.

My Crab Cakes

My husband and I thought these were very good. We used imitation krab and panko bread crumbs for the outside. The only problem we had was keeping them from falling apart before they hit the hot oil. Once they started cooking, they were fine, but it some of them almost didn't make it that far. We added a tablespoon or two of flour into the mixture and that seemed to help.

E-Z Drop Biscuits

I was very surprised at how well these turned out. I had decided to make breakfast one morning for me and my husband, but had no shortening, no cream of tartar, nothing but the most basic ingredients. These were fine w/o the cream of tartar. I did have to add a tablespoon or so of extra flour, but I will definitely make these again.

Morel Mushroom Bisque

I gave this 4 stars simply because I made quite a few changes. First, I added 1/4 c of white wine to the butter/mushroom mixture while sauteeing. Second, I used 8 oz of white mushrooms and 8 oz of baby bellas. Third, I used half & half instead of cream, chicken broth instead of water and still had to add a tub of condensed stock. (I added that later, not when the recipe said to.) Probably had more to do with the broth that I was using, but it was completely bland until I did that. I also added about a tbsp of garlic powder. It turned out wonderfully!

Bread Machine Challah II

This was just okay. Not great, not bad per se. I have been having bad luck with bread lately, so maybe it was just me. Didn't rise nearly like the picture implies. And yeah, the dough was REALLY sticky. I may have added too much flour at the kneading stage, but I don't think I would bother making this again.
