Easy Vegetable Beef Soup

Nice, easy-on-the-tummy soup. I did make a few changes simply because I was missing some ingredients. I used sweet potato instead of white; two large tomatoes instead of canned tomatoes; 2 white onions instead of just 1; 3 chopped carrots; and about 2 cups of frozen peas. Very nice and easy soup...will definitely make again!

Japanese Spinach with Sweet Sesame Seeds

I made some adjustments based on others' comments and we LOVED this dish! I wilted the spinach in 1 tbsp EACH of soy sauce and water. Once wilted, I added a dash of garlic powder, onion powder, and fresh ground pepper to the remaining liquid in the pan. Then I added the sesame seed oil and sesame seeds. Very good!

Cream of Wheat Griddlecakes

This recipe is excellent! I made a few changes: I used a splash more milk to make them a little thinner...we prefer thinner pancakes :) I warmed the milk for about 1 minute, then mixed in the cream of wheat. I had that sit while I prepared the rest of the ingredients, then added it to the batter mixture. I used only 4 tbsp of sugar and a little less than 1/2 cup of oil. Next time I would like to try using 1/2 oil and 1/2 applesauce for a healthier version. We LOVED these pancakes and will make these again for sure. I also made a blueberry sauce for syrup..delicious!

Lentil Soup

Very good soup. I changed it up a little and used some suggestions from others. I added more of each spice, plus a generous 1 tsp each of cumin and coriander, 3/4 tsp of curry powder, 4 carrots, 5-6 celery sticks, potatoes, green beans, 4 cups of vegetable broth instead of chicken broth and 4 cups of water. I also added brown rice, barley, a mixed beans to this recipe as well as the lentils. very hearty and nutritious. And I only used about 2 tbsp of the oil instead of 1/4 cup. Will definitely make again!

Downeast Maine Pumpkin Bread

LOVE this recipe! It's a HUGE hit with my friends! I use 1/2 cup of oil and 1/2 cup of applesauce. Also, i only used 2 cups of sugar and a few ounces more pumpkin. This is a family favourite!

Creamy Carrot Soup

Oh wow!! This soup is to die for!!! I substituted coconut milk for the cream as someone else suggested and used about 2 1/2 - 3 cups of veg broth (didn't throw any away) Definitely will make again and again!!

AMAZING!!! I used only 1/2 tsp of the sea salt and 1/8 tsp of crushed red pepper flakes. I also didn't have any onion powder and it was still delicious! I love the idea about jarring it and giving it as gifts. Beautiful recipe!

Fantastic...need I say more. I did, however, only use the marinade portion of this recipe as I was short on ingredients and time. So delicious though. Definitely will make again and next time as the whole recipe.

Spinach Quiche

This was excellent. I made a few adjustments and it was a hit! Instead of butter I used about 1 tbsp of olive oil. Instead of the feta cheese I used about 1/4 cup of herb and garlic cream cheese mixed in with the onion and garlic mix. It sort of melts a bit. Then I sprinkled mozzarella cheese on top and put the quiche in the oven. This recipe also made enough for two pies so I put 4 eggs per pie and just split the spinach/onion mix in half. Very good...will definitely make again!

Curried Leek Soup

this soup was very good however i found it to be a little bit salty...perhaps because of the boullion granules..? Next time I will add 1 tsp of chicken boullion granules and some other veggies. Very nice soup...will definitely make again:)

Clone of a Cinnabon

My husband will drive out of his way to go to the Cinnobon store but not anymore...when I made these, he thought that I had bought them...he said he could not taste any difference between these and the store bought ones. Very good! Also good to freeze them individually then eat one whenever you'd like!
