Banana Chocolate Chip Cake

Reviewed: Dec. 31, 2009
Very good cake!! Based on previous reviews I made the following changes: 1 cup white sugar, 2 large bananas, 1 tsp. vanilla, 1/2 cup of chocolate chips, and baking soda rather than baking powder. This cake is better served after it completely cools down - otherwise the chocolate is melted and completely overpowers the banana flavor. Next time I will use even less than a 1/2 cup of chocolate chips - less is more in this recipe. Also, this recipe would taste delicious as cupcakes with walnuts.

Cinnamon Coffee Cake I

Reviewed: Dec. 30, 2009
VERY GOOD COFFEE CAKE!! I made the following changes: pecans instead of walnuts, a combination of white & brown sugar for the 2 cups of sugar in the cake, brown sugar for the topping, a teaspoon of cinnamon in to the cake batter and a half of cup of oats to the topping. I will definitely make again- this cake smells amazing in the oven and tastes delicious!

Golden Dinner Rolls

Reviewed: Feb. 11, 2009
Good rolls. I cut the recipe in half and it made 9 large dinner rolls. I also used country crock instead of shortening and they came out really good. The dough is very wet- I used almost another cup of flour during the kneading stage. Next time I will add honey to the dough to play up the sweet flavor. Will definitely make again.

Pear Oven Omelet

Reviewed: Oct. 26, 2007
The idea is great - I love pears and they're great in the morning. My only dislike was the top crust. It was a strange texture and was difficult to cook thoroughly without burning. I would recommend either using a larger pan or less batter on top to make it thinner and easier to cook through. Otherwise, a less fluffy crust might work as well. Thanks for the recipe! It was fun to try.

Mom's Baked Macaroni and Cheese

Reviewed: Feb. 26, 2007
Based on the previous reviews I added 2 cans of condensed cheese soup and a little extra milk. I threw in red and green bell pepper, chives, green chiles, salt, pepper, garlic and Kraft's Mexican blend cheese. I mixed the shredded cheese in with all the noodles rather than simply put it all on top and it came out creamy and delicious!!

Buttery Corn Bread

Reviewed: Feb. 23, 2007
This recipe is FANTASTIC. It was really quick and easy. I added a generous squirt of honey and cooked it in a 9 inch cake pan for about 35-40 minutes. The top got very golden brown which gave it a really great crunch and the inside was soft and sweet. I absolutely recommend it!
