No Bake Camping Cookies

The best thing about these is that they are quick and easy! I wanted a no-bake cookie, but I didn't have peanut butter, like most of the recipes called for, so I went with this recipe. I left out the coffee and added just a tad of honey. Filling and yummy!

Stir-Fried Chicken With Pineapple and Peppers

Delicious and easy to make! I used fresh pineapple, red onions, and red peppers...colorful end result! I increased the sauce and mixed it all together with asian bean threads. Also added a little brown sugar in the end to cut the saltiness of the soy and give it a nice mix of flavors. Excellent!

Oatmeal Raisin Cookies VII

Overall a pretty good recipe. Easy to make without a mixer, cooks fast, and isn't too overpoweringly sweet. I did them as bars, but have not tried dropping them as cookies and probably would use a different recipe if I make oatmeal cookies, but as bars, they are good.

Carrot Cake I

I used 1/4 cup less oil and used store bought creamcheese icing, then coated the entire cake in walnuts. It tasted alright, but I had big problems with the batter overflowing the pans. You should see my oven! It is definately too much batter to put in just two round pans! Pretty good recipe overall, and some of my problems may have been cook error.

Strawberry Nut Bread

I used a 1/4 less oil, and slightly less sugar, and it turned out perfect. I cut up the strawberries relatively small and had no problems cutting it. I cooked it a little less (45 min or so), and it came out a perfect golden brown. Fast, and easy to make! My boyfriend doesn't even eat strawberries, and he's the one who told me it should be rated a full five stars!

Chicken, Garlic, and Sundried Tomato Pasta

Excellent and easy to make! Took me a little work with the spices to make sure it doesn't just taste like I poured chicken soup over pasta. Will consider using egg-noodles next time to mesh the flavors. Overall a great dish, that looks more complicated than it is!

Banana Sour Cream Bread

An exceptional bread! Extremely moist! I used non-fat sour cream and only had 5 instead of 6 bananas, and it came out great. Be aware that this recipe makes A LOT of batter. I barely had enough room in my mixer for all the ingrediants. I used two standard bread pans and then six mini loaf pans and managed to use up all the batter. Will definately make it again.

Lemonade Pie V

This pie was extremely easy and fool proof to make! I made it on the spur of the moment, and the only problem was that we were all too impatient to wait for it to harden in the freezer. We ate it after only 1 1/2 hours, so it was still runny, but I finished it up for breakfast the next day, and by then it was frozen enough to cut and just as deliscious!

Chocolate Mint Sandwich Cookies

I followed the directions to the T and they only came out what I would consider "so-so." The dough wasn't that sweet, and the frosting was overly sweet and way too runny. I couldn't seem to get the consistancy of the frosting thick enough to hold the top cookie on, and I had a large mess on my hands. Overall, they taste ok, but not great.

Grandma Ople's Apple Pie

This was the first pie I'd ever made, and it came out a HUGE sucess! I used store bought pie crust, coated it with a thin egg wash, then cooked it a few minutes to harden so it wouldn't get soggy from the topping. Then, I followed the recipe, but added only half the caramel mixture to the apples. I then took another softened store bought crust and cut it into strips, latticing atop the mound of apples. I poured on the rest of the sweet sauce, before adding a finally sprinkling of white sugar to the top crust. I cooked it about 35 minutes and then took it to my boyfriend's house (he's addicted to a. pie!), where we reheated it for a few minutes. It cut easily and tasted DELICIOUS! I don't even particularly care for any pies, but this is actually a new favorite food of mine! I will make it many times again exactly as I stated before!

Brownie Caramel Cheesecake

This is the best cheesecake I've tasted in a loooong time! The end result was so good, I could have sworn it came from the "Cheesecake Factory" restaurant! I used only part of a brownie mix recipe to avoid the crust being to thick. Then, to simplify things, I used already liquid caramel topping atop the semi-cooled brownie. I had no problems with the layers staying intact. To finish it off, sprinkle chocolate and peanut butter chips ontop of the cheesecake, along with some caramel and chocolate drizzled atop. Great!
