So good! We usually add lots more veggies, like snow peas or broccoli (or my kid's favorite, 'baby' corn) and double the sauce. This is a favorite at our house.

Guinness® Corned Beef

I baked this in the oven (300 degrees), covered, for about 6 hours, adding potatos, carrots onion and cabbage for the last 1 1/2 hrs. One bottle stout was sufficient. It was so tender and very tasty! Even the MIL loved it. Be sure to use a flat cut (less fat). I used brown sugar, but only about 1/2 cup. It does not serve 16! Maybe 8, especially if you have teenagers.

Tangy Fajita Marinade

A hit at my house. We had pre-sliced the beef, and it was extremely flavorful with this marinade. It would be good with chicken as well. Everyone assembles their own fajita, as our family has wildly differing tastes. We serve with traditional fajita vegetables and toppings, plus fresh tomato and shredded lettuce. We have both hot and mild salsa. Everyone is happy, and all request this marinade again!

Tex-Mex Turkey Soup

A busy day winner! I made this in 10-15 minutes, put it in the crockpot on hi and served 2 hours later. I have a smaller crockpot, so added only 1/2 the corn and skipped the tomato soup. I intended to add some tomato paste if it was too thin, but it was not needed. The cheese, sour cream and crushed tacos were perfect. It was a hit with my family - everyone wanted seconds.

Creamy Chicken Enchiladas

I used green salsa and "4-Cheese Mexican" shredded cheese, so added some tanginess and spiciness. This was a big hit with the family, very easy to prepare and satisfying. We made an extra pan and put it in the freezer (without salsa)for the following week. The flavor was excellent, but the texture of the frozen one was a bit mushy. Hopefully I can find away to freeze one more successfully, as it would be a great dish to have on hand for those extra-busy days.

Italian Breaded Pork Chops

Excellent recipe, easy to make. I used only 1 large egg and less coating mix (I kept the proportions the same. I also used only 1 T of olive oil. Husband and kids both loved it - would make again.
