Grilled Salmon II

Absolutely loved this recipe. I doubled the amount of red pepper flakes and ginger (use fresh grated ginger), and substituted olive oil for peanut. I only had a few hours to marinate it, but next time will marinate overnight. Will also use peanut oil in the future. The green onions were a must. This will be one of our camping favorites, as it can marinate in a ziploc til it's ready. Thanks!

Strawberry Avocado Salad

This salad is outstanding! I added a few goat cheese crumbles and used only 1 tsp of sugar. Definately one of my new favorites.

Italian Sausage Tortellini Soup

Love this soup! The only change I made was to use 1 lb of Italian turkey sausage instead of just the one regular Italian sausage. I wouldn't have needed a whole lb but used it because I bought a pkg. I really liked the flavors of the red wine and beef broth, and all those veggies just made the soup. Thank you!

Baingan Bharta (Eggplant Curry)

Used low fat sour cream instead of yogurt and canned petite diced tomatoes instead of fresh. Made with the chicken makhani from this site--it was a huge hit!

Flavorful Beef Stir-Fry

Really liked this recipe. I used rice wine vinegar instead of white wine or apple juice (didn't have any) and doubled the sauce to use as a marinade for the beef. I added to it a tsp of ginger garlic paste and a tsp of hot chili sauce. The veggies I used were broccoli, mushrooms, shredded carrots, bean sprouts and sugar snap peas. I also added some cashews for crunch since I'm not crazy about water chestnuts. I'll definately make this one again.
