Hugh's Dry Rub

Megan's Granola

I tried this recipe because I was trying to recreate the granola that a chef I used to work for made at her B&B. This was an Excellent place to start. I use cashews instead of walnuts (walnuts to bitter for me), I also add coconut slices, pepitas, and 1 tsp flax seeds (for 1/3 recipe) instead of oat bran. It just isn't possible to buy granola any where near this good. It is not supposed to be a Diet food! :)

Orzo with Parmesan and Basil

I thought this was awesome. I usually hate rice-a-roni side dishes, but I thought orzo by itself was fantastic. I agree that you could cut down on the butter and it would still be great. Our basil plants were going berserk so we were looking for recipes that needed fresh basil.

Roasted Pork Loin

I would not recommend stuffing the paste into the meat. For me it left pockets of really bitter herb-ness in the meat. Had to scrape it off/out of the slices for it to be edible. I cooked a 1.4lb loin roast in a covered dish at 320 for about 1hr with a little wine drizzled over the top. Next time I'm going to try skipping the wine entirely and put apple slices in the bottom of the dish about 15min before the roast is done. Going to trade thyme for rosemary also. The only good thing about this as is was that the meat was pretty tender.

Blonde Brownies I

I'm at ~5000ft in Denver so I need to cut down on the oil, add a little more flour,etc. I haven't optimized the high altitude version yet - but I'm sure once I do these will be excellent! Not the author's fault for the recipe not working perfectly at altitude. :)

Baked Buffalo Wings

I LUV buffalo wings, and I hate how much wing shops charge for them. I was super excited to find a recipe for them so I don't have to pay 3x as much at a shop. I don't recommend putting them in the fridge after coating them. Otherwise, excellent recipe.

Rum Sauce

Awesome Sausage, Apple and Cranberry Stuffing

I thought this stuffing could have used about half as much sausage. It felt pretty heavy. But it was quite delicious, even still! I will definitely make this again - just cut back on the sausage.

Ultimate High Altitude Chocolate Chip Cookies

I made a half recipe. It was fairly difficult to mix everything together - the butter was cold because its cold in my house. But once I did get everything mixed up it worked beautifully. P.S. I'm in Denver.

French Baguettes

I don't have a bread maker either. I mixed the liquids with one packet fleishmann's rapid-rise yeast, let it get foamy, then added 2cups all purpose flour and salt and mixed. Then kneeded in bread flour until no longer sticky. Then let rise in oven at 100degrees until poking it leaves indent. Then pounded it down, cut in half, rolled out to baguette shape, made slits on top, brushed with 1egg WHITE and 1tbsp water. (I did allow to rise more before brushing with egg etc. because I live in Denver and stuff rises like crazy here.) Baked ~23min. Was awesome.

Lentil Soup

Awesome soup. The only things I changed were to add the meat from 1 smoked ham shank, added about 1/2 tsp ground cumin, and 4 bouillon cubes. The bouillon cubes brought the salt level to just about perfect without additional salt.

Mocha Chocolate Chip Banana Muffins

I followed a few suggestions of a reviewer from Jan 2, 2004: I used 4 med bananas, 1/4 c oil and 1 cup applesauce (unsweetened) in place of the margarine. I used 1 rounded T of instant espresso (Medalglia D'oro) dissolved in just a little more that 1 T water, and only 1 cup of sugar. I live in Denver so I added an additional 1/2cup flour, filled the papers just about all the way full, and baked them at 370 for about 22-23 min.

Quinoa Side Dish

I wanted a little more excitement from this recipe, so I made some changes and it came out really well: I used olive oil instead of butter. 1 cup broth, 1 cup water. Skipped the parsley cuz I hate parsley. I add about a 1tsp curry power to the liquid before it boils. Then add about a 1/3 of a cup frozen peas with about 5min left to cook.

Best Brownies

When I made these I replaces 1/4 cup butter with 1/2 cup applesauce (caution I'm at 5000ft so I need more moisture). I skipped the frosting. They were a little cakey but they were quite perfect when re-heated a little bit when they were a few days old. Will be making again and will throw caution to the wind and try the frosting.

Apricot Lentil Soup

Maria's Rice

The rice was fairly flavorful. I'm only giving it 3 stars because it tasted a lot like pre-made onion soup and it was pretty boring. Not surprising, but next time I'll make it with just beef broth and add caramelized onions and sauteed mushrooms. I'll try making it in a rice cooker and report back.

Chi Chi's Corn Cake

So I kindof thought I was making a very soft corn bread. Not so much. While it was a very interesting, and quite yummy treat (read:dessert item) it was NOT a corn bread. Just FYI for the northerners out there.
