Fresh Apricot Crisp

Wow!! I've made this twice: once with apricots off our neighbor's tree, and again when peaches came into season. I use half the amount of white sugar, max. The crumbly topping is almost exactly the crumbly topping on my mom's strawberry rhubarb pie - I.e. one of the best things in the world. I'm tempted to try with pear next!

Raspberry Custard Kuchen

I really couldn't envision what this was going to be like... but I really really liked it. I substituted half the butter in the crust for applesauce (pretty much do that with all baked items). That worked fine. This is a keeper now that our raspberry bushes are established and producing cups a day.

Lentil and Cactus Soup (Mom's Recipe)

I would have given this a higher rating, except I used fresh cactus fronds. I had to look up how to cook them, and they turned out really mucilaginous. Next time I'll try jarred cactus. The lentils were really yummy.

Creamy Au Gratin Potatoes

We microwaved the sliced potatoes for a few minutes first to cut down on oven time. That worked well. I, personally, did not think this needed additional cheese sauce. I recommend adding ground thyme to the sauce and sprinkling the top with some bread crumbs before baking.

Orzo Shrimp Stew

I made a bunch of changes... but I've giving the recipe some stars for being a good starting point. 1) started with cooking chopped onion, minced garlic in olive oil. 2)Added a tube of soy chorizo that I found in the Mex grocery store that I just had to try. 3) Added can toms, ~4cups chicken stock, 5oz frozen spinach, thyme, dried italian seasoning. Boiled. 4) Added orzo, boiled, simmer for ~10min 5) Then added 1/2 lb shrimp for ~1 min 6) Salt and pepper to taste. I prefer leafy greens in soup to broccoli.

Roasted Brussels Sprouts

Cut sprouts in half if they are large; otherwise the cooking time will be much longer. Also, definitely add minced garlic!!

Barbeque Halibut Steaks

My husband and I really like this marinade for sturdy fish. I think you can use about half as much marinade for the suggested amount of fish. Works well with baked/broiled fish also.

Ethiopian Cabbage Dish

This recipe is pretty close to the Ethiopian veggies at the restaurants I've eaten at. Made a version once that called for a ton of nutmeg. Caution... run away from versions that call for nutmeg.

Tuna Noodle Casserole

I actually made this with canned mackerel (one 15oz can) drained - cheaper, lower in toxins, and no dolphin issues. I thought this was quite good. A lot like my mom's tuna casserole - but actually yummy. I chopped a whole onion, , added fresh ground pepper to the veggies, added ~2/3cup frozen peas, only used ~2 tbsp mayo total. To the cheese sauce I added ~1tsp dried thyme, and ~2tsp good mustard. I added ~2 tsp cream cheese to supplement the soy milk I have on hand. I do not have pimentos on hand. I sprinkled a little bit of Italian seasoned bread crumbs over the top and baked as indicated. I did not add additional cheese to the top. I didn't think it needed more cheese.

Connie's Zucchini "Crab" Cakes

We didn't want to fry them so we followed MANDT2's comment. I actually don't love regular crab cakes... too mushy. I thought these were really great. Made a creamy legume soup to go with. Excellent veg dinner. If you salt and squeeze out water watch the overall salt level since Old Bay has a lot of salt. Next time we plan to find a recipe for lower salt Old Bay and add more seasoning.

Spicy Mexican Style Zucchini Casserole

Chi Chi's Corn Cake

So I kindof thought I was making a very soft corn bread. Not so much. While it was a very interesting, and quite yummy treat (read:dessert item) it was NOT a corn bread. Just FYI for the northerners out there.

Maria's Rice

The rice was fairly flavorful. I'm only giving it 3 stars because it tasted a lot like pre-made onion soup and it was pretty boring. Not surprising, but next time I'll make it with just beef broth and add caramelized onions and sauteed mushrooms. I'll try making it in a rice cooker and report back.

Best Brownies

When I made these I replaces 1/4 cup butter with 1/2 cup applesauce (caution I'm at 5000ft so I need more moisture). I skipped the frosting. They were a little cakey but they were quite perfect when re-heated a little bit when they were a few days old. Will be making again and will throw caution to the wind and try the frosting.

Roasted Garlic Cauliflower
