I actually made this with canned mackerel (one 15oz can) drained - cheaper, lower in toxins, and no dolphin issues. I thought this was quite good. A lot like my mom's tuna casserole - but actually yummy. I chopped a whole onion, , added fresh ground pepper to the veggies, added ~2/3cup frozen peas, only used ~2 tbsp mayo total. To the cheese sauce I added ~1tsp dried thyme, and ~2tsp good mustard. I added ~2 tsp cream cheese to supplement the soy milk I have on hand. I do not have pimentos on hand. I sprinkled a little bit of Italian seasoned bread crumbs over the top and baked as indicated. I did not add additional cheese to the top. I didn't think it needed more cheese.
