Firecracker Fried Chicken Drumsticks

Reviewed: Jun. 11, 2009
I followed the recipe but somehow my chicken came out pretty gross. The coating did not taste good and on medium high heat they were done in way less than 25 mins, and even then they got burnt on one side. I would not try this recipe again.

Brown Sugar Meatloaf

Reviewed: May 27, 2009
This is the best meatloaf. I added some coriander, cumin and worcsteshire sauce and reduced the milk and put the brown sugar/ketchup combo on top. YUM

Extreme Banana Nut Bread 'EBNB'

Reviewed: May 20, 2009
this is the only banana bread recipe I will use from now on! I used half white flour and half whole wheat flour. I added another teaspoon of baking powder, used butter flavored shortening instead of butter, and added half a teaspoon of vanilla. I also sprinkled sliced almonds on top while baking. These loaves came out absolutely perfect.

Zucchini Patties

Reviewed: Apr. 10, 2009
I added a ton of fresh pressed garlic and Italian bread crumbs and these were so wonderful. We ate them with marinara sauce on top. The kids didn't know it was zucchini, they thought it tasted like ravioli and ate it up.

Best Tuna Casserole

Reviewed: Mar. 27, 2009
I followed others' suggestions and added half cup of milk and another can of soup. I also added another can of tuna because I didn't think there was enough. Next time I will add salt and pepper as well.

Pumpkin Bars I

Reviewed: Nov. 25, 2008
I give this 5 stars with the slight changes most other reviewers suggested. I used 1 cup whole wheat flour and 1 cup regular flour, cut down the sugar to 1.5 cups, and used the recipe for Pumpkin Bar Icing to put on top - except you have to double it for the two pans of bars this recipe makes.

These were good. I put extra ground cloves in. Came out just moist and fluffy enough.

Hearty Italian Lentil Soup

Reviewed: Sep. 9, 2008
4 stars as written, 5 stars with some adjustments I made. I didn't have to let the rice cook for 20 minutes because it would have burned. I also didn't have to drain the lentils, because after they simmered for 20 mins it was basically a mushy soup itself. I added a lot of dried basil, garlic salt, oregano and more parsley to both the meatballs and the soup itself. The soup was wonderful and hearty - but definitely needed the extra spices for flavor.

Special Rhubarb Cake

Reviewed: Sep. 9, 2008
I rate this four stars only because I think it should have included a lot more rhubarb. I'm sure it would have been yummy with the vanilla sauce but what I did was use my leftover rhubarb and simmered it for about 25 minutes and added sugar until it turned into a sauce. I drizzled the sauce over the cake to give the cake more rhubarb flavor.

Banana Cream Pie III

Reviewed: Sep. 9, 2008
This definitely gets 5 stars. I had to restrain myself from eating half the pie. My whole family (especially the kids) LOVED and raved about it. I actually made pie crust from scratch instead of using pre-made crusts. I should have made two more pies from the amount of requests for seconds and thirds I got.

Oatmeal Cake I

Reviewed: Jul. 13, 2008
This definitely gets five stars without a doubt. I used 1 3/4 cups boiling water and substituted milk for cream because I didn't have any cream. My whole family loved it (although my husband thought it was too sweet) and they all want me to make it at least once a week from now on. Also, I just turned up the oven temp to 450 after the topping was spooned on and left it in there for several minutes. after the coconut mixture/frosting started browning it was perfect. I didn't mess with the broiler. Thanks for the recipe!

Tea Cookies I

Reviewed: Jun. 14, 2008
I used 1/2 cup butter and 1/2 cup vegetable shortening and they came out perfect and delicious. I'm always going to use this recipe from now on. I really don't know why the other people had problems with this recipe, but I followed it exactly as follows with the exception of the butter and they couldn't be better.

Chewy Coconut Bars

Reviewed: Jun. 11, 2008
I used 3/4 cup coconut, 1 whole tsp salt, left out choc chips because I didn't have any, left out one egg because I didn't have any, and decreased the flour/baking soda mixture just a little bit (maybe by about 1/2 cup)and these came out perfect. My whole family literally raved about them and they were gone in one hour. Then everyone asked for more! Next time I think I will try with chocolate chips.
