Slow Cooker Chicken Pot Pie Stew

I did make some changes to suit my own taste. I put 2 whole frozen chicken breasts in the crock pot followed by 2 10.75 oz cans cream of chicken and one 10.75 oz can cream of mushroom, then one can of chicken broth. didn't use celery, chopped up 6 carrots, used 1 bag frozen peas, used 8 small potatoes, omitted chicken bouillon, 1 1/2 tsp pepper, 1 tsp celery SEED, 1 tsp garlic salt, 1 tsp poultry seasoning, and 3 cloves fresh minced garlic. then shredded chicken after 6 hours and mixed in some flour to thicken a little.

Quinoa and Black Beans

I had to use more vegetable oil - more like 1 tablespoon and a half. Also used kernels from one ear of fresh corn. Two cans of beans would have been too much - 1 was just right. next time I will toss in some diced tomatoes at the end. YUM

Crumb-Coated Chicken Thighs

This is my new homemade shakenbake recipe - no more store bought! However I did make a few changes. 1/4 cup bread crumbs just wasn't enough, esp w/ all the spices. So I used 1 cup bread crumbs and kept all the spices the same, except added 1 tsp garlic powder. I removed the skin, coated them in flour, dipped them in milk, then shook them in a bag w/the crumb seasoning. 35 minutes in the oven is perfect and they were sooo good.

Hash Brown Casserole II

So delicious. Used half a cup more of cheddar. Didn't have cornflakes so eliminated that plus the extra butter to go w/them. Used cream of mushroom instead of chicken. The hash browns I had was a 1.75 lb bag but that ended up being perfect.

Slow Cooker Italian Chicken Alfredo

This was good. I actually made it w/shrimp - put the shrimp in an hour before sauce is done cooking, to avoid being overcooked. A note, though: DO NOT eat this as leftovers. Eat it right away fresh because the consistency is not very good after being re-heated.

Zesty Slow Cooker Chicken Barbecue

I only had 4 chicken breast halves but this ended up the perfect amount of sauce for that much chicken. YUMMMMM. I used KC Masterpiece original flavored BBQ sauce and it was delicious. *edit* to use up leftovers make a chicken BBQ pizza: put shredded chicken chunks on dough w/pizza sauce and thinly sliced onions (in rings) and top with cheddar cheese. YUM

Slow Cooker Chicken and Dumplings

I have to give this 3 stars AS WRITTEN. I'd definitely make it again because it was yummy, but with some changes. I only used one 7.5 oz package of biscuit dough, and thank goodness I did because that was just enough for the dish. 2 10 oz packages would have been wayyy too many dumplings. Next time I will put 2 10.75 oz cans worth of chicken broth as there was not enough liquid in my opinion. Also, I added a couple shakes of sage, garlic salt, onion powder, pepper and thyme. Lastly, next time I would cook on low for 3 1/2 hours, shred the chicken, then put dough in, dunking them below the surface of the liquid and let cook on high for another 1 1/2 hours. High temp the whole time = burnt parts around the side.

Mango Blueberry Muffins With Coconut Streusel

I seriously ate 7 of these muffins in one sitting. But one note: they taste WAY better after cooling completely - the flavors come out more. And here's what I changed: doubled the streusel, added a tad bit brown sugar to streusel, used applesauce instead of butter in muffin batter, used half whole wheat flour and 1/4 cup flaxseed to make them healthier, and had to use regular milk because I didn't have buttermilk. SO ADDICTING!!!

Creamy Crab and Pasta Salad

Mmmmmm. eating it as I type. I only had 8 oz left of pasta so I used that and multiplied the sauce ingredients by 1 and a half. I used imitation crab meat and didn't have honey mustard or honey so I used regular mustard with a dash of sugar. Also, I didn't have green onions so I just used regular white onions. And lastly I didn't have fresh dill so I substituted dried. This was very yummy!

Blue Cheese Burgers

These were good. I didn't have any dry mustard so I left that out but kept everything else the same (eyeballed the quantities) but I'd make these again. Note to self: only make on grill because if you try to make them in a pan on the stove the blue cheese will stick and burn on the pan.

Super Sausage Gravy

I don't eat pork so I used turkey breakfast sausage and I loved this soooo much! Also since there wasn't as much fat drippings from the turkey, I added 3 tbsp butter when browning the sausage. I also doubled the sauce. YUM

Succotash

I had no idea it would taste so good! Except I made these changes to suite my own personal tastes: only 1 stick butter, just eyeballed the salt and pepper, added onion powder and garlic powder, I actually forgot to put the sugar in so next time I'll try it w/. Also, only use 2 tomatoes. And I had a small bag each of frozen corn and lima beans but this recipe was awesome.

This can be adaptable according to the ingredients you have on hand. I did add more spices, like a couple dashes of garlic powder, chili powder, onion powder, more cumin. and I think it needs some kind of liquidy base mixed in to prevent it from being dry, for instance sour cream and milk or a tomatoey base (marinara sauce or tomato sauce?) I doubled the rice and broth though, that is a must. I also used monterrey jack instead of swiss.

Three Bean Salad

I tried this with chickpeas instead of wax beans and I think next time I would prefer wax beans instead. Also, the sugar needs to REALLY be cut down to 1/4 cup. Salt and celery seed should both be upped to 1 whole teaspoon in my opinion. And I will try it with only vegetable oil next time instead of substituting olive oil to see how that makes it taste. But with these changes it's good.

Baked Teriyaki Chicken

Very, very yummy with these changes: Double sauce. (even with small amount of skinless chicken pieces, i.e. drumsticks or thighs) Here's my own take on the sauce: 2 T cornstarch, 2 T water, little less than 1/2 cup white sugar, little less than 1/2 cup brown sugar, 1/2 cup regular vinegar, 1 full tsp garlic powder, 1 tsp ground ginger, 1/2 tsp black pepper. Pour half the sauce on the chicken and cover and bake half an hour. Uncover, pour rest of sauce on chicken, bake 15 min, then baste chicken with sauce in bottom of pan and bake 15 more minutes. Comes out PERFECT this way! Can use chicken breasts and bake at 400 for half an hour.
