Golden Granola

Reviewed: Oct. 21, 2011
This was great! I didn't use any seeds because I didn't have any, but substituted 1/2 cup chopped almonds instead of the slivered ones. I also would cut down the salt to 1 tsp next time. I didn't have raisins/apricots so I used dried cranberries.

Red Lentil Curry

Reviewed: Sep. 13, 2011
This was great. I think the tomato paste mixture needs some water though to make it a little less thick.

Simple White Cake

Reviewed: Aug. 18, 2011
I made this recipe with no changes except for adding lots of sliced fresh strawberries (that I had to use up in something) and this was TO DIE FOR!! I made a strawberry pink frosting to put on top. I think I've gone to heaven.

Broccoli Cheese Soup

Reviewed: Aug. 16, 2011
Excellent with my changes: I halved the recipe. used fresh broccoli and real shredded cheddar cheese. 1.5x the cheese. I also used 1 1/2 tsp minced garlic sauteed in with the onions and no garlic powder. I also used about a T less butter and 3.5 cups of chicken broth. DELICIOUS!

Marshmallow Treats

Reviewed: Aug. 9, 2011
I don't know if it was 4 cups or not, but I had a 10 oz bag of big marshmallows which I used and I put 5 1/2 cups cereal in. Yum! Also, I had to grease my waxed paper with a little bit of Crisco shortening and that worked like a charm! Nothing stuck to it.

Vegetarian Korma

Reviewed: Aug. 9, 2011
What a delicious and hearty vegetarian meal. This recipe did need a few changes. 2 T oil. I had to use 1/4 tsp ground ginger - did not have fresh. Up the garlic to 6 cloves. I omitted the jalapeno, don't like the taste. Doubled the ground cashews. 2 1/2 tsp salt. The curry powder/salt should be thrown in with the oil for a minute FIRST and THEN mix in the onions. Also, the potatoes and carrots MUST be boiled beforehand for around 10 minutes at least, otherwise they will be crunchy. I kind of threw in however many veggies I wanted but tried to stick to the original measurements. I didn't have any cilantro but I thought it was great without any on a bed of rice. I will definitely make this again!

Beef Samosas

Reviewed: Aug. 7, 2011
4 stars as written - 5 stars with my changes. 1.5 times the spices - as written I thought it was too bland. Instead of cumin seeds I just used ground cumin cause I didn't have the seeds. I halved this recipe and it still made a ton. I skipped out on the cilantro and green chile peppers because I didn't have them. I also didn't use phyllo dough but used a recipe for samosa dough and it turned out great!

Chicken Stir-Fry

Reviewed: Aug. 3, 2011
I had to make some changes to make this 5 stars, but wow it was DELICIOUS once I did! I doubled the soy sauce and garlic, so basically put the chicken/cornstarch with 4 T soy sauce, 1/2 t ginger, and 1/2 t garlic powder in a bag and let sit in fridge for 30 mins like the recipe said. Instead of the veggies I used half a bag of frozen stir fry veggies. I used 1/2 cup water w/1 chicken boullion cube and added more cornstarch/water to the chicken/veggie mixture until it thickened. The only thing though was that it needed about 1/4 cup sauce....like teriyaki type sauce. I will look for a recipe on this website for the sauce or just buy some at the store. This was sooooooo good.

Spinach Quiche

Reviewed: Jul. 31, 2011
I don't even like quiche, but I decided to give this a try and I am glad I did!! What I did was used regular minced onion and sauted it in some olive oil and minced garlic, then added it to the cooked spinach. I didn't use croutons but Italian breadcrumbs. Before baking, I also put sliced fresh tomatoes on top. The tomatoes added such a great flavor that next time I think I will use another reviewer's suggestion and add some sun ripened tomatoes in the actual quiche itself as well!

Kofta Kebabs

Reviewed: Jul. 30, 2011
These were great. My changes were: 1/4 tsp allspice, instead of the onion use 1/2 T onion powder, and add 1/4 cup breadcrumbs. Instead of putting them on skewers I just formed them into long cylindrical meatballs and fried them in oil like my mother in law does. Then I made a sauce made of tomato sauce, garlic, and a little cinnamon and a dash of pepper to go with them. These were good!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jul. 25, 2011
wow these were amazing! But I used others' suggestions and upped the flour to 1 3/4 cup, upped the baking powder to 1 tsp, and lessened the salt to 1/2 tsp. I omitted the walnuts cause I didn't have any but these came out soooooooooo good. I think 13-14 minutes bake time is better because mine came out a little underdone.

Barbeque Chicken

Reviewed: Jul. 25, 2011
I was impressed by this recipe - delicious! Taste was on point, but only thing I did different was double the sauce (for 8 chicken thighs) and omit the water. I did, however, add about 1/8 cup water mixed with cornstarch to the sauce to thicken it. I poured about half the sauce over the chicken to begin with, and during the last 15 minutes of baking, (when the cover is off), I basted the chicken with the rest of the sauce. This gave it the PERFECT touch and was a crucial step to having great BBQ chicken. I will definitely make this again!

Fresh Southern Peach Cobbler

Reviewed: Jul. 19, 2011
This couldn't have been better. I had to use 6 peaches because that's all I had. I used about 3/4 tsp baking powder instead of the whole tsp. Since I only had a round 9" cake pan to bake this in, the topping was sufficient. However, if I baked it in a wider pan next time, I'd use 1.5 x the ingredients for the topping.

Oatmeal Banana Nut Bread

Reviewed: Jul. 19, 2011
This bread was good. I liked it because it didn't sink in the middle like the rest of the recipes I've tried did. I used half whole wheat flour. It was good but not as moist as I would have preferred, but still, very good. I like the added oats to this recipe.

Monkey Bread I

Reviewed: Jul. 13, 2011
This was sinfully delicious!!! I used 2 16 oz packages of buttermilk biscuit dough (the jumbo size) and didn't quarter them, I just halved them and it worked fine. Didn't need as much cinnamon/sugar mixture. I'd say about 1 1/2 tsp cinnamon and 3/4 cup white sugar. The brown sugar/butter mixture was perfect. I didn't use raisins or nuts cause I didn't have them. I sprayed a bundt pan with lots of pam and placed all the biscuit balls inside. This was the perfect amount of dough for my pan. It came out perfect!

I actually used half a jar of fire roasted eggplant (from the ethnic food store) instead of doing it myself, and followed everything else exactly. It was yummy!

Cajun Spice Mix

Reviewed: Jul. 11, 2011
this is great. I only used 1/3 the cayenne pepper and no red pepper flakes because I don't like things too spicy, but the flavor was still great.

Graham Cracker Crust I

Reviewed: Jul. 11, 2011
Delicious and easy. I followed another users suggestion to put exactly one packaged section (out of the 3 sections in one graham cracker box) in a freezer bag and ground it with a can of soup. It was so easy and not time consuming. I also cut the sugar to 1/4 cup. This was PERFECT! and went really well with my banana cream pie.
