Beef Pot Roast

I have been using this recipe since I discovered it three years ago. I deglaze the pan before adding the onions and garlic and also add about a cup of beef stock. I have also on occasion added sliced mushrooms. Perfect results every time. Thanks for the post.

Gumbo Style Chicken Creole

Another good recipe for leftover chicken. I made a few changes to suit our tastes: Replaced mushrooms with 1 1/2 cups frozen cut okra; added 2 cups chicken broth, as suggested by other reviewers; used 1/2 red pepper and 1/2 green pepper, because that's what was in the fridge; substituted 1/2 tsp cajun/creole seasoning for the liquid pepper. Accompanied by whole-grain rustic bread for soaking up the sauce.

Hodie's Sloppy Joes

Even my husband who doesn't like sloppy Joes liked this. The second time I used blackberry jam in place of the brown sugar -- very tasty!

Pork Chops with Burgundy Mushroom Sauce

Very tasty! Cooking wine has too much salt for my taste, so I used a good zinfandel instead; and because of the sugar in the wine, sauce needs to "boil" only about three to four minutes to thicken. Will surely make it again, and add shallots to the sauce.

California Sherry Chicken

My husband and I agree this is a "keeper." I'm glad I read the reviews and used a good quality sherry rather than the cooking sherry. I added julienned sweet red pepper to the veggies for color and texture.

Silver's Savory Chicken and Broccoli Casserole

I tweaked this a bit by adding two cloves of garlic with the onion, substituted peas for the broccoli and Italian blend cheese for the Swiss. Next time I will add fresh grated Parmigan at the end. It was very good.

Ronaldo's Beef Carnitas

This method of cooking the meat is so very easy, and it is delicious. I used pork shoulder in place of the beef and chipotles in place of the green chiles. My husband and I have enjoyed it in tacos and burritos. This is a keeper! Muchas gracias.
