Soft Chocolate Cookies

Perfect chocolate cookie recipe as is. Quick, easy, uses cocoa powder so it's pantry friendly and economical. I've added lots of things to the batter with success: chocolate chips, coconut, raisins, nuts,marshmallows, etc. My favorite substitution is brandy for the vanilla. Really bumps the chocolate up a bit.

Vegetarian Korma

This turned out great...ate every bit of leftovers too. Made one substitution - chili paste for jalapeno since that's what I had on hand, but it was fine.

Jalapeno Popper Wontons

I made a half batch since it was just my hubby and I. They were so good we made another half batch a few hour later and made pigs of ourselves...but we couldn't help it. He totally flipped over them. First batch, made with fresh jalapenos from my garden and a few garlic chives added. Second batch added some garlic powder and chopped black olives. Both were amazing!

Raisin Puffs

Really good cookie. Mine didn't flatten as much as the ones pictured...but great none the less. I also added a tsp of rum to the raisin water and another to the batter for a 'rum raisin' variation.

Jam Filled Butter Cookies

I made as written. Really buttery and good. I baked them an extra minute. I made my holes with a wooden spoon end, but next time, I think I want to make them the tiniest bit larger for more filling...but that's my thing...not a problem with the recipe. I will definitely make these again. They went in my Christmas baskets.

Addictive!! Note: My butter was too soft which made the final dough too sticky to handle, but after a bit of time in the fridge, it was fine. I've found that it works well doing a round shape too...easier to make uniform cookies

Vegetarian Chickpea Sandwich Filling

Really really good. Used fresh dill and lemon juice chopped celery and chives. I can't eat raw onion, but I put a slice on my husband's sandwich. The dill and lemon give it the seafood vibe without the fishy thing. It's so hard to find a decent cheap veggie filling. I will make this again definitely. Had it with lettuce and tomato on a kaiser roll.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Really good soup. Very different. I made the recipe as directed except I substituted sour cream for the yogurt (what I had on hand). I needed to add a bit of extra water after the puree to get a better consistency. The balance of spices and flavors is really nice. No one flavor overpowers the others but everything's in there. My husband and I really liked it.

Pineapple Bars

These were just OK. Tasted fine. Reminded me more of a crisp than a bar cookie though, with the oatmeal in it. The pineapple taste seemed to be a bit subtle for the recipe. I used butter instead of shortening and should have reduced the salt to compensate... but it still tasted fine.

Tart Lemon Triangles

I love recipes that only use a few ingredients you'd already have in your pantry and come out wonderfully. This recipe fits that bill perfectly. Not too tart - not too sweet....very lemony. My husband and I both loved it. It was even better to us when served cold. I served fresh blueberries as garnish.
