Spicy Sweet Potato and Coconut Soup

sauted Onion and Ginger in Coconutbutter, used red chili paste + 1 Tbsp. Currypwd. instead of red curry paste, then added Coconutmilk, Stock and cubed Sweet Potatoe, cook for 20 Min., puree and added lemon and cilantro, no salt... wonderful soup

Banana Chai Bread

I really liked the texture and taste of that bread. I used 1/2 c. strong brewed chai tea. Make sure you don't bake it to long otherwise it will come out really dry. Next time I will probably lower the temperatur to 300 degrees.

Butter Chickpea Curry

Great recipe. Used diced tomatoes instead of tomatoesoup and real ginger instead of powder. Also substituted half of the potatoes with carrots and added on the end 2 cups of fresh spinach. Thanks for sharing.

Spinach Enchiladas

Great recipe. I thought it even tasted better than the one you get in mexican restaurants. I just added one yellow Pepper to the Spinach cheese Mix because I like a lot of veggies. I also added some cumin, chilipowder and salt.

Avocado Green Goddess Dressing

Great dressing. I just used plain yogurt for the mayonaise and added a little water otherwise it would be to thick. Thanks.

Buttermilk Chocolate Bread

Very nice moist bread. I just substituted applesauce for the butter and only used 3/4 cup of sugar. It tasted really good. Thanks for the recipe.

Pistachio Crusted Chicken

Great recipe. I used 1/2 lb. of chicken stripes for my husband and 1/2 lb. of catfish for myself because I don't like chicken. I thought the crust tasted very good on the fish and my husband loved the chicken version. I bet the crust will taste even good on veggies. I only baked it for 15 Min. We will definitely be making this again !

Great recipe. Though I changed a few things. I only used 1/2 cup of sugar and whole wheat flour instead of white. I also replaced half of the oil with applesauce. They turned out wonderful.

Soba with Toasted Sesame Seed Sauce

This was an exceptionally good asian dish. The only thing to consider is measurements for the sauce: I just doubled all liquids. For us this minor adjustment seemed to do the trick. Overall a wonderful recipe.

Oatmeal and Applesauce Pancakes

Great recipe. The pancakes came out very fluffy. I changed half of the flour to whole wheat and used yogurt instead of sour cream. I also added 1 Tbsp. of maple syrup to taste.
