Tiramisu Layer Cake

Reviewed: Feb. 21, 2008
Fantastic! I used Kahlua liqueur for the coffee flavored liqueur. Like many of the previous reviewers, I doubled the Kahlua everywhere in called for, except in the frosting I used 3T. I made two coffee-flavored layers for the cake, and used about 1/4 cup of the instant coffee for a more intense flavor/color contrast. The chocolate shavings were much easier to make than I thought, and looked so pretty on top of the cake I didn't even have to use the cocoa power for more garnish. I used toothpicks to make the holes when saturating the cake with the coffee/Kahlua mixture-the toothpicks worked out just fine. It took a lot longer to assemble than I anticipated though because the layers took long to cool. Overall a easy (if time consuming) recipe! Two people asked me for the recipe when I served it!

Manicotti Alla Romana

Reviewed: Jan. 9, 2008
Awesome recipe. I was cooking for a vegetarian who doesn't eat parm cheese either, so I subbed chopped mushrooms for the beef, and put in extra spinach (I used part frozen and part fresh spinach). It turned out really well, but next time I'm going to try adding sausage (instead of ground beef)! Highly recommend.

Beer Bread I

Reviewed: Jan. 9, 2008
AWESOME AWESOME AWESOME. This is a perfect quick bread recipe-crusty on the outside, warm and chewy on the inside! I used Pete's Wicked Ale, a ruby brown ale that is on the sweeter side (but NOT a "sweet", girly beer!). So easy and so good, ten thumbs up!

Baked French Fries I

Reviewed: Feb. 21, 2008
There were awesome, and oh so easy and quick. I substituted the onion powder for parm cheese (as per another slightly different baked french fry recipe on this site). The spices and the parm were perfect together, and the potatoes came out to a perfect consistency. An easy snack or side dish-five stars!

Alaskan Spicy Spinach Dip

Reviewed: Jan. 9, 2008
The flavors are spicy and awesome. I cooked mine in a crock pot-just threw everything in and let it melt. I was able to mix the cream and cheese together, BUT the dip did separate when it cooled off, and reheating it in a microwave was do-able, but a little difficult if you have a microwave without power settings. Overall a quick and delish dip.

Red Chard and Caramelized Onions

Reviewed: Aug. 7, 2008
Like a few people mentioned below, I left out the olives and capers, because I did not have them on hand. I made sure to add enough kosher salt to season the dish though. Even without the olives and capers this was a DELICIOUS way to serve swiss chard. The tiny bit of brown sugar goes a long way, and is the perfect amount to season the onions and chard. I went the extra mile and added sausage bits and halved cherry tomatoes to the dish, then served it over bow-tie pasta. YUM!

Linguine with Clam Sauce and Baby Portobello Mushrooms

Reviewed: Feb. 20, 2007
The ingredients were amazing, I love baby bella mushrooms. Like one of the previous reviewers, I also added Broccoli which only made the dish better. My only complaint was the dish was too salty. I would omit one or two of the bullions if I were to make this again. With the garlic and the Worcestershire, there is plenty of flavor!
