Cheesy Chicken Meatballs

Reviewed: Jun. 11, 2012
I made these w ground 99% lean ground turkey. I couldn't find ground chicken at my grocery store. I also used baby bell garlic herb cheese. I should start off by saying that I'm not a huge fan of ground turkey. But, I loved these. I reduced to one egg & added a bit more garlic. My husband loved these, too. I'm trying them in spegahatti tonight. Flavorful, low fat goodness.

Cocoa Oatmeal Cookies

Reviewed: May 18, 2011
I wanted a lower cal cookie, I used this recipie but subbed Splenda baking blend for the sugar. I used both the brown & white blend. *Make sure you use conversion chart when using Splenda Baking blend* I used 3 egg whites, instead of 2 whole eggs. Turned out well. I made the cookies larger to mimic the Quaker Breakfast Cookies.

Cheese and Bacon Potato Rounds

Reviewed: Aug. 27, 2010
These were amazing! My husband said I could make them every day & they are better than TGIFriday's potato skin. I topped them with sour cream. If you have smaller potatoes, you can cut them lengh wise (so they are more ovals instead of rounds). I didn't have a brush, so I melted butter & tossed the potatoes in that. I also sprayed Pam on baking sheet first

Chicken Cordon Bleu I

Reviewed: Aug. 27, 2010
Great recipe! I used jack cheese, my husband loved that change. I also dipped in egg and put a pat of butter on top. Next time I will omit the butter and just use the creamy sauce suggested on the site (1 can cream chic soup & sour cream). I heated this on stove & allowed family to drizzle their chicken. My husband loved the sauce & also poured on his veggies.

Sour Cream and Chive Mashed Potatoes

Reviewed: Aug. 23, 2010
I did not use Yukon potatoes, maybe that made a difference. My husband said he couldn't taste the chives. I added some green onions for extra flavor

Quick and Spicy Chili

Reviewed: Feb. 20, 2007
I forgot to add the cayenne pepper, it was slightly dull. I enjoyed the corn, made a fun texture. I also omitted one can of kidney beans and added a can of pinto beans. It was super easy!
