Cheesy Chicken Meatballs
I made these w ground 99% lean ground turkey. I couldn't find ground chicken at my grocery store. I also used baby bell garlic herb cheese. I should start off by saying that I'm not a huge fan of ground turkey. But, I loved these. I reduced to one egg & added a bit more garlic. My husband loved these, too. I'm trying them in spegahatti tonight. Flavorful, low fat goodness.

Cocoa Oatmeal Cookies
I wanted a lower cal cookie, I used this recipie but subbed Splenda baking blend for the sugar. I used both the brown & white blend. *Make sure you use conversion chart when using Splenda Baking blend* I used 3 egg whites, instead of 2 whole eggs. Turned out well. I made the cookies larger to mimic the Quaker Breakfast Cookies.

Cheese and Bacon Potato Rounds
These were amazing! My husband said I could make them every day & they are better than TGIFriday's potato skin. I topped them with sour cream. If you have smaller potatoes, you can cut them lengh wise (so they are more ovals instead of rounds). I didn't have a brush, so I melted butter & tossed the potatoes in that. I also sprayed Pam on baking sheet first
