Baked Kale Chips

AWESOME! This tastes too good to be healthy! I am a major "salty snacker," and these are fantastic. I could almost eat them just for the texture. Like other reviews i got creative with the spices and since I love chex mix, I used the same spices (onion powder, garlic powder, season salt, and ground red pepper for a kick) It was super! I gave some to Hubby to try and he tasted a few - wrinkled his nose and said yuck. Ten minutes later he was eating them off my plate saying... "Okay these are addicting." Can't wait to try again with other spices!

Honey Baked Chicken II

Okay, anything this easy should NEVER be this good. I was shocked at the robust flavor. I used boneless breasts because that is what I had. Plated with long grain and wild rice and asian vegis with a little cinn and ginger... hubby said GREAT!

Easiest Peanut Butter Fudge

This was a super easy recipe. I followed the advice of other reviewers and used 3 cups confectioners sugar, 1 cup peanut butter and 2 cups brown sugar ( I actually used 1 white and 1 brown since I only had 1 cup of brown). I let the sugar/butter mixture come to a rolling boil and timed it for 2 minutes then removed from heat added the peanut butter and vanilla then SLOWLY added (1/2 c. at a time) the powered sugar to the pot which I was stirring with a wisk. It is a good arm workout but the fudge turned out smooth and yummy. :O)

Crispy Rosemary Chicken and Fries

I prepared this dish exactly as directed and also followed other reviews that said to pour off the liquid half way thru the baking cycle. While the flavor of the fresh herbs are amazing - - the dish as a whole was extreamly greasy. Next time I will use whole chicken breast and cut the olive oil in half. Maybe even an olive oil cooking spray over the potatoes and just a splash of lemon with the herbs on the meat.

Tuscan Soup

I am a soup-a-holic and this still gets 5 stars from me. I made it true to the recipe the first time and it was really good. The next 15 times I got creative and found that the best was when I substituted kale for the spinach (kale stays hearty no matter how long it is kept warm). I added corn, carrots, a dash of nutmeg and for even more heat - or if you use sweet Italian sausage – a shake or two of ground cayenne pepper. Served with a nice crusty baguette this is the perfect rainy day or cold night comfort food… Cheers for the recipe!

Yummy Yam Casserole

I made this recipe 2 years ago for Thanksgiving. I am hosting it again at my house this year and my brother has called to request this dish specifically! You know it has to be great for a man to request a dish he had over two years ago. Thanks for the recipe!

Lemon Pasta Sauce

This is a great recipe. The only thing I added was a teaspoon or so of sugar. I teamed this with the "Garlic-Lemon Double Stuffed Chicken" recipe also from this site. I nested the chicken on the pasta topped with the sauce and plated it with steamed broccoli/carrot vegi combo. It looked great and tasted better!

Award Winning Soft Chocolate Chip Cookies

As if this needed one more great review... I am married to the "Cookie Monster" who loved these (not to mention the other sugar hounds in the house.) The cookies stay soft and can be popped in the microwave for a few seconds to give you that "fresh from the oven" thrill even days later. (if they last that long.) I used chocolate pudding as that was the only flavor I had at the time and they were great Double chocolate cookies! I can't wait to try other flavors of pudding and add-ins. Thanks for the recipe!

Homemade Butter

Great Activity too. My kids had no idea where butter came from so what a great way to teach them and spend time with them. While the processor was going we looked up old style churns and talked about how tough that would have been. Great idea. Thanks.

Spicy Bean Salsa

While reviewing another recipe I realized that I use this salsa in soooooo many of the Southwestern and Mexican dishes I make that I better let folks know that if you try this recipe, your shopping list will always include the ingredients to make it. THIS IS AN ABSOLUTE MUST TRY for anyone who enjoys Mexican food! PS. Try adding some cilantro too.

Chicken Tortilla Soup V

With all the great reviews, I had to try this. I'm glad I did. Followed the recipe with one exception. Instead of jar salsa I used some leftover "spicy bean salsa" (from this site) and to keep the tomato content added a can of diced tomatoes. Also, as other reviews stated, added 1 additional can of chicken broth. The kids loved it. I think it is the only time I have gotten either of them to eat tomatoes in anything but ketchup! Thanks for the recipe. By the way, "Homesteader Cornbread" (from this site) is a good side for this awesome soup.

Taco Bake I

I was in a hurry to find something simple and quick to feed the family when I found this recipe. My 13 year old (aka the garbage disposal) could not get enough. My "particular" hubby said to print this one out and keep it. I did. Also, the recipe called for jar salsa, but I used some left over "spicey bean salsa" (from this site) and that just made it even better! Also, as another review suggested, I layered crunched up tortilla chips on the bottom. This goes into the "family favorite" list at our house!

Baked Sesame Chicken

Was really excited about this recipe but was a little disappointed. As the other reviews stated it was bland I added some garlic powder, paprika and white pepper for a little zing. The spices where fine but the coating was kind of mushy.
