Ham Croquettes

I had bought a ham and since there are just 2 of us, even the smallest ham I could find was sure to be enough for several meals. I came across this recipe while looking for things to do with the leftovers after a traditional ham dinner was finished. These were delicious. I have had chicken croquettes before but never ham, so I wasn't sure how good they would be. I'm very glad I gave them a go. I had to substitute shallot for the onion since my last onion went bad on me. I also used panko in the croquettes and Italian breadcrumbs for the coating. Of course I used leftover ham instead of lunch-meat too. Otherwise kept the recipe as stated. Served with sauteed asparagus and it was a wonderful dinner. I'll make these again next time I have leftover ham. These would also be wonderful as an appetizer for a party. Thanks for the recipe!

Pizza Popcorn

I didn't have garlic salt so I just used garlic powder instead. I also used half shaker Parmesan cheese and half fresh grated Romano cheese. That being said I kept everything else the same. I really liked the flavor, though I thought it was mild. Most of my friends really enjoyed it though a few thought it was to herby. Nothing survived the game night though so it was a hit.

Cinnamon Popcorn

This was tasty. I made this for game night with my friends. Nothing but crumbs survived. I ended up having to bake it for closer to half an hour to get it to stop being wet feeling. Still really really tasty. I loved it.

Creamy Potato Leek Soup II

I changed only one thing. I added a few minced garlic cloves in with the leeks while they were sauteing. I also didn't measure the cream or broth. My boyfriend has decided that he is buying leeks anytime he sees them now so I can make this really easy and really tasty soup.

Pan-Fried Asparagus

I have never liked asparagus before, neither has my boyfriend. We picked some up to try it again, you know, give it another shot. This was wonderful. I did double the amount of garlic, but that is because we are garlic-aholics. I also added one finely minced shallot. At the end I added about a quarter cup of Italian style bread crumbs because there was a lot of butter in the bottom of the pan. I served this with the mustard crusted tilapia from this site and it was a wonderful meal. The bread crumbs really added a nutty sop up the butter sauce goodness you shouldn't miss.

Mustard Crusted Tilapia

I used double the fish so I had to double the topping. I wish I had tripled it since I barely had enough to coat the fish fillets. It was very tasty though since I used a different white fish with skin on, it was slightly fishy, not in the good way. I will definitely try this again as my boyfriend really loved it. I served this with the pan-fried asparagus from this site and it was a wonderful dinner.

Love Mussels

This is so good. I had picked up precooked frozen mussels at the supermarket because I had a craving for them and there weren't any fresh. I had no idea what I was going to do since my usual recipe needs the liquor the mussels release during cooking. I came upon this and was very happy since I had everything it needed in my pantry. I substituted canned diced tomatoes for some of the tomato sauce but kept everything else exactly the same. I served this over angel hair pasta and it was a huge hit. My boyfriend says I am always allowed to get mussels if I cook this dish. Just the right amount of spice and flavor that doesn't overwhelm the mussels. Just a perfect dish. My craving for mussels is satisfied until tomorrow when I'm going to want more of this.

Cornish Game Hens with Garlic and Rosemary

Wow. Just wow. This was amazing. I had picked up Cornish game hens on sale and had no idea what to do with them. I can't imagine a better way to cook them. They were crispy skinned and very juicy and tender. The pan drippings made one amazing gravy and the roasted garlic was so good both on its own and mashed into the gravy. I used a semi-dry Riesling and roasted garlic chicken broth. I used only two hens but kept everything else the same (more gravy this way) except for using dry rosemary instead of fresh since that is what I had on hand. Served with garlic mashed potatoes and salad. This was an easy and very tasty dinner.

Heavenly Chocolate Mousse

This was my first time ever making my own whipped cream as well as chocolate mousse. Complete success. I followed the directions exactly and it came out wonderfully. Next time I might add just a little vanilla extract and sugar to the whipping cream before whipping, just to sweeten it up a touch. Made this for a dinner and a movie night with another couple and it was great. I'm going to have to make it again soon. Maybe with strawberry or raspberry syrup drizzled on top. Thanks for an easy and great recipe.

Coconut Curry Chicken Balls

These are a really pretty and very tasty item to have on an appetizer bar for any party. For Halloween I call them mummy balls, for Christmas and New Year's parties they are snow balls, but no matter what I call them, I know they will disappear. Every time I throw a party, there are certain friends who ask if these are making an appearance. I'm always happy to oblige.

Golden Sweet Cornbread

I made this last night to accompany a Southwestern style black bean soup for a group of friends that were coming over. It was the perfect accompaniment. Everyone loved it and the pan was soon wiped clean. This has the perfect amount of sweetness in a cornbread. It had beautiful color and texture and the flavor was spot on. I don't know how often I'll buy the package mix now that I have this recipe. Really easy to bring together and done from start to eating in 25 minutes. You can't ask for better or faster.

Hasty Chocolate Pudding

This was really easy to make and delicious. I always have the stuff needed to make this on hand so I really can't see buying chocolate pudding mix anymore. This totally fixed my chocolate craving in a great way. Really tasty either still warm or fully cooled.

Spinach Stuffed Chicken Breasts

I love the combo of feta and spinach so wrapping that in chicken and then bacon is a great idea. However the bacon didn't cook correctly for me. Next time I'll stuff my chicken and then coat them with eggwash and breadcrumbs and cook them that way. Great recipe.

Barley Burger Stew

This was tasty. I had left over tomato juice and celery stalks from Bloody Mary's and needed to find a way to use them up. I found this recipe and had everything needed to make it. I was very happy. I doubled the recipe and then doubled the barley because I really love the stuff and wanted it to be a bigger presence. I did add a bit more spice in the form of cumin and mesquite seasoning, about 1 tsp each. The boyfriend and I ate it up happily. Next time I have leftovers from Bloody Mary's I'm making this!

BUSH'S® Southern Beef and Beans Casserole

I made this for dinner tonight with a few preemptive strikes against the over sweetness that other people mentioned. In addition to the bell pepper and onion I minced fine 1 small habanero pepper. I left out the tomato paste since I didn't have any on hand and didn't want to go out and purchase some. I added 1 tsp each ground cumin, BBQ seasoning, and taco seasoning. This made the dish both sweet and a little spicy. It was really good with those additions. And 1 small package of corn bread mix was just enough for a thin layer on top that cooked just right. The cornbread was my favorite part.

Spanish Style White Bean and Sausage Soup

This was my first time cooking with kale. I couldn't pass it up at our local farmers market it looked so lovely. I had andouille in the freezer and had no idea what to do with it, or the kale for that matter, until I came across this recipe. So happy that I did. I didn't have any saffron so I left that out and I used canned beans because I didn't have any dry on hand nor did I have the time to soak them properly. I did add a bit more seasoning, mostly poultry seasoning, onion powder, garlic powder, and powdered rosemary. I will make this again next time I buy kale.

Easy Baking Powder Drop Biscuits

These were super simple to make and taste great. I made creamed chipped beef for dinner and needed biscuits to go with it. I was out of a lot of ingredients that other recipes called for, but had everything for this one. So happy that I was missing other ingredients, these were wonderful. The left over biscuits from dinner made a great desert with honey. No need to ever buy refridgerator biscuits again.

Pakistani Lentil Curry

I followed the advice of other reviewers and doubled the spices except for the cayenne. I also roasted a butternut squash and added the chunks of that into the dal. This was super good and super easy. For my first time ever cooking lentils, this was a great choice. Going out to get more lentils to make this again. Thanks for the great recipe.

Peanut Butter Popcorn

This was amazing! I made it for a gathering with friends and I have just a few crumbs left of a big glass casserole dish full. I did double the amount of peanut butter at the request of my boyfriend. (He loves peanuts and anything that has them.) I did follow the advice of other reviewers and baked it at 250 for 30 minutes stirring every 10 minutes. Just a tip: the coating mix is gooey and sticky. If you don't want to spend a lot of time cleaning the mixing bowls or the spatula, spray them with cooking spray, like Pam, first. The mixture doesn't stick and is really easy to clean up.
