About this Cook
A college student who is a history education major with a literature and a theatre minor. I love anime, acting, my saxophone and singing. Cooking is a fun pasttime with great rewards.
My favorite things to cook
I love to cook stuffed cabbage using my grandmothers recipe and homemade chicken noodle soup. I am also trying out new recipes from here whenever I can.
My favorite family cooking traditions
My mother and I do all the holiday cooking including a traditional Norwegian Christmas Eve diner for the whole family.
My cooking triumphs
Everytime I try something new and it works out great. The almost stuffed peppers was just one of those great successes.
My cooking tragedies
I haven't had any real tragedies that I can remember, so I'm thankful for that.

Ham Croquettes
I had bought a ham and since there are just 2 of us, even the smallest ham I could find was sure to be enough for several meals. I came across this recipe while looking for things to do with the leftovers after a traditional ham dinner was finished. These were delicious. I have had chicken croquettes before but never ham, so I wasn't sure how good they would be. I'm very glad I gave them a go. I had to substitute shallot for the onion since my last onion went bad on me. I also used panko in the croquettes and Italian breadcrumbs for the coating. Of course I used leftover ham instead of lunch-meat too. Otherwise kept the recipe as stated. Served with sauteed asparagus and it was a wonderful dinner. I'll make these again next time I have leftover ham. These would also be wonderful as an appetizer for a party. Thanks for the recipe!

Creamy Potato Leek Soup II
I changed only one thing. I added a few minced garlic cloves in with the leeks while they were sauteing. I also didn't measure the cream or broth. My boyfriend has decided that he is buying leeks anytime he sees them now so I can make this really easy and really tasty soup.

Pan-Fried Asparagus
I have never liked asparagus before, neither has my boyfriend. We picked some up to try it again, you know, give it another shot. This was wonderful. I did double the amount of garlic, but that is because we are garlic-aholics. I also added one finely minced shallot. At the end I added about a quarter cup of Italian style bread crumbs because there was a lot of butter in the bottom of the pan. I served this with the mustard crusted tilapia from this site and it was a wonderful meal. The bread crumbs really added a nutty sop up the butter sauce goodness you shouldn't miss.
