Potato Leek Soup I

Great recipe. I also added 8 cups of broth to thin the soup down. I also tried a version with onions instead of leeks because it was all I had - not the same. The leeks make the soup.

Lentil Soup with Lemon

I'm so glad I found this recipe. It is easy to prepare and bursting with flavor. I simmered the lentils an extra few minutes and used the dish as a side dish and topping for sweet potatoes instead of serving it as soup. Fab!

Zesty Coleslaw

YAY! Love creamy slaw but didn't want the calories. Used fat free mayo and Miracle Whip to stay guilt free and it still tastes great! Love the horseradish too. Doubled the sauce and used one 48 oz. bag of cabbage from Sam's Club. Bam. Tub o'slaw for the week. Thanks Army Wife!

Chuck's Favorite Mac and Cheese

Great base recipe with adjustments. Skip the bread crumbs entirely. DO add 1/2 cup milk to the mixture. And to create a creamier sauce, blend the cottage cheese until nearly smooth, then add remaining ingredients in processor and whirl together for a few seconds. I also added hot dogs for more flavor!

Sausage Cheeseburger Pizza

I was very skeptical about this recipe, but it really works. I used ground beef instead of sausage, diced the dill pickles, and kept it easy with Pillsbury pizza crust. My husband said it tasted like a McDonald's cheeseburger!

No Bake Peanut Butter Pie

Excellent with adjustments. I made an Oreo crust and it worked well. I also used 1.5 cups of peanut butter and only a 12 oz. (tub and a half) of whipped topping. Not too much for two pies then, and very peanut buttery!

Bean Burrito Casserole

Great meal. I sauteed half of an onion in oil, sprinkled with garlic powder and added two cans of cream of chicken soup, skipping the sour cream. I then placed cheese in mix and stirred just enough to combine ingredients before pouring mixture over burritos. With salsa it was tasty!
