Zucchini Alfredo

I've never thought of addind zucchini to cream cheese alfredo sauce. What a great zucchini recipe. I added green onion, small meatballs of sausage,use butter instead of oil, more milk, and much more parmesan and served over spaghetti noodles. I didn't worry about cooking the water out of the zucchini as the sauce is quite thick anyway. I use about a cup of milk and one small zucchini grated. Thanks for the great idea.

Apple Yogurt Pancakes

I did not care for this recipe as it is. I had to make a bunch of additions before I was finally somewhat satisfied. I added more spices, more apple, about a 1/4 cup of sugar, and 1/2c of oats. I thought the original recipe was bland. My family likes sweeter pancakes.

Mexican Cookie Rings

My toddlers thought these were great. I was expecting a little more buttery flavor but they were a nice soft cookie. With a little sweetness on top they would be excellent. I always have a bunch of egg yolks left over and this will be my go to recipe to get rid of them. I will make larger cookies next time, slightly flatten them and then add a bit of fluffy frosting when they are cool. Thank you for the recipe.

Hawaiian Chicken Kabobs

I marinated for about 3 hours. It must not have been long enough because I thought the chicken was pretty bland tasting. The pineapple was too flavorful, though. I wouldn't recommend marinating the fruit. I will try again but with chicken thighs. The chicken breast was too dry with this marinade.

Cheesy Rigatoni Bake

I served this at my daughter's 1st Birthday to a party of 12 people. My children don't eat meat and neither did some of my guests so it was a wonderful filling dish for everyone. Even meat eaters liked it and didn't seem to miss anything. I doubled the recipe and made 2 13x9 dishes. There was more than enough. It was a great base recipe that you can add anything to or prepare the recipe as is for a meatless dish. With each casserole, I mixed the pasta with a 26 oz. jar of sauce and added lots of garlic to the white sauce. I thought it was very flavorful. I will make this again and try adding different meats and vegetables. I also made both casseroles the night before I was going to cook it and from the refridgerator to the oven it took about an hour for a cold 13x9 casserole to cook.

Charleston Breakfast Casserole

This was so easy to make. The flavor reminded me of pizza for some reason. I used garlic butter crutons, and made it in a 8x8 using 4 eggs and 1C of milk. I had to cook it for about 50 minutes, until the center finally puffed up. Such a great recipe for our family since I almost always have all the ingredients on hand and we love breakfast food. Great recipe.

Peppermint Meringues

These were a nice light treat. I put my eggs in a bowl of warm water to bring them to room temp. faster. My egg whites whipped up lickety split. I crushed the candy canes to a fine powder and mixed it in. Then I topped each one with a chocolate chip. Mmmm. And so easy too.

Sugar Cookie Glaze

You would think all sugar glazes are the same but the corn syrup really makes a difference. It was just perfect. I used milk instead of water. The icing was still very shiny, I thought.

Grilled Zucchini II

I used huge zucchini. Monster size ones. I thought the skin on the zucchini was too tough and the grilling didn't seem to soften them. Flavor was pretty good. I may try again but with peeled zucchini.

Famous Coconut-Almond Balls

There is something wrong here. The chocolate tasted funny to me with so much shortening. 1/4 a cup seems to be too much. I think 1 or 2 TBS would be plenty. Also the flaked coconut should be chopped up in a food processor and I think it could have used a bit more corn syrup. Maybe 2 more TBS would do the trick. "Rolling the coconut into balls" wouldn't be the phrase I would use it is more like squeezing the coconut into balls. My husband really liked them, I didn't. I might try again with the changes I think it needs.

Party Cookies

Not very good. I used black cherry flavor and I didn't think they were very flavorful. The bottoms of my cookies burnt and I wonder if maybe the temp. was too high. There is just something missing with this recipe. I won't make them again.

Soft Oatmeal Cookies

Very good oatmeal cookie recipe. Baked them for 8 min and they turned out perfect. They were almost too sweet, though. I think reducing the sugar would be a good idea next time I make them. I will be using this recipe again for sure.

Quick and Easy Alfredo Sauce

This is the best sauce. I make this quite often. It is quick, delicious, easy, and cheap to make. So much better than alfredo sauce in a jar and not much more time to prepare. I will always use this recipe it is wonderful.

Graham Cracker Muffins

This was so easy and I love that you don't use butter or oil in it. However, I did think it was kind of blah tasting. Too boring. I thought the graham cracker taste would be a bit stronger. I might try it again with chocolate chips in the batter and maybe even a marshmallow icing.

Cherry Crunch

It was super easy but not super delicious. A little too oaty for my taste but my husband and son enjoyed it. I did think the crunch topping was a tad dry. I might make this again because it is so easy but I will alter the recipe a bit. More butter, less oats.

Coconut Cream Cake I

This was really easy and delicious. Our local store did not carry coconut cream so I used coconut milk instead. It still turned out perfect. I also like more whipped topping so I doubled the batch. It was a big hit. I will be making this again and again.
