Cajun Crawfish and Shrimp Etouffe

My husband and I have made this twice and loved it both times! I especially love that it is a great way to use whatever seafood we happen to pick up - we did crawfish/shrimp the first time, mussels the second and will be using all shrimp when we make it for lunch today. I also love how easy it was for me to update this recipe to be gluten free. I can't eat stuff that uses flour as a thickener because of Celiac disease but I was able to use rice flour to make the roux and it tasted really good. My husband said he couldn't tell the difference.

Slow-Cooked Oriental Chicken

Awesome. Super simple and my husband and I loved it. The only thing I don't like is having to cook the chicken before putting it in the crockpot because the crockpot is usually my lazy way out of cooking. Next time I might try just throwing it in raw and letting it cook a little longer, but I'm worried that may make it become slush.

Fiery Fish Tacos with Crunchy Corn Salsa

I didn't use the jicama, but the salsa still tasted great. The combinations of spices for the fish were good, but I think next time I will use a little less of it. My husband and I love spicy food, but this was a bit much. Also, we used hard taco shells instead of soft.

Caribbean Holiday Shrimp

My husband enjoyed the shrimp, but the flavors tasted a little off to me. Like they didn't belong together or something. I think the red pepper flakes and cilantro combination threw me off the most.

This was great. I didn't put have the amount of honey like people suggested and thought it was great anyway. I didn't have any anchovy paste, though, so I left that out.

Blackened Tilapia with Secret Hobo Spices

Very good! I made a few substitutions (used catfish instead of tilapia, olive oil instead of vegetable oil, served with rice instead of bread), but it still tasted very good. My only complaint was that I think 3 minutes on high was a bit much. Next time I think I'd cook the fillets on medium-high heat instead.

Creamy Cilantro Chicken with a Kick
