Veggie Vegetarian Chili

Great non-meat chili! I made the mistake of using Penzeys Chipotle Chili Powder without realizing its potency. Chili was very spicy, the way I like it but I was making this for a potluck. I did make a few adjustments to the recipe: no mushrooms, frozen corn, 3 10 oz cans of Rotel tomatoes, 1 can dark red kidney, 1 can light red kidney, 1 can pinto (all drained), about 1/3 c water and 10 oz veggie crumbles. Simmered for about 40 minutes and it was great consistency - thick and not watery at all.

Chickpea Macaroni Salad

Pretty good recipe. I will add some fresh herbs next time to give more flavor. I also agree with other reviewers to use less oil and lemon juice. Added some grilled chicken for lunch leftovers.

Yakisoba Chicken

Great recipe. I couldn't find soba noodles so I used rice noodles which I thought were a little chewy but still good. Also had to substitute chili sauce for chili paste. Wasn't as spicy as I would have liked probably due to the substitution. Will spice it up more next time.

Oatmeal Peanut Butter Cookies

Followed some recommendations of other reviews and made the following changes: 1 c unsalted butter instead of shortening and margarine, 3/4 c brown sugar, 1.5 c whole wheat flour, 1/2 tsp salt and 1 tsp vanilla (all other measurements and ingredients the same). Cookies were excellent, good texture and taste.

Beef Teriyaki

Four stars for quick and easy, sauce was nice consistency. Did use fresh garlic, mushrooms, and green onions along with the broccoli, but I agree with others that it is a bit bland. Will use this recipe again adding additional seasonings for our taste.

Great chicken dish, very easy to make and I found it to be flavorful. Used chicken cutlets since they were on sale, and used seasonings than recipe called for.

Asian Coleslaw

This recipe was very good. Tasty and colorful. I only used 1 Tbsp of oil and added a dash of sesame oil. Omitted the cilantro (forgot to buy) and added chow mein noodles. Went very well with panko crusted pork chops!

Spinach and Orzo Salad

Excellent salad. This will be the salad I bring to picnics. Easy to make and easy to serve. I think it would also be good with some grilled shrimp or chicken tossed in.

Restaurant-Style Potato Salad

Great potato salad. Everyone loved it. Few changes though: used red potatoes with the skin on, omitted the carrot and pimentos and added hard boiled eggs and bacon bits. And I ran out of white wine vinegar so I used rice vinegar instead.

Broiled Tilapia Parmesan

This was EXCELLENT. I don't make fish very often because I'm afraid of overcooking. I followed the cooking time exactly and fish was moist and tender. I didn't use the measurements exactly as I "eyeball". I did use less butter and added some seasoned breadcrumbs to the mixture. Also seasoned the fish with Old Bay before broiling.

Tomato-Cream Sauce for Pasta

Excellent. I triple this recipe to mix with angel hair pasta and top stuffed chicken breasts. I break up the tomatoes with a potato masher so it's not so chunky. I also substitute fat free evaporated milk for the 1/2 & 1/2.

Chicken and Corn Chili

Loved this recipe. I made some modifications by seasoning the chicken with the spices and than "dumping" the rest of the ingredients on top. I used 1 can black beans, 1 can northern beans, 1 can rotel tomatoes, 1 can corn, small can chopped green chilis and a chopped onion along with refridgerated salsa. Cooked 6 hours on low and than shredded the chicken. This was great with some cheddar cheese on top. Also rolled in tortillas topped with enchilada sauce and cheese and baked.
