Million Dollar Chicken

No creme fraiche around here, so I used Mexican creme. The chicken was perfectly roasted and tasty, but I'm not convinced the basting added that much flavor. I must have sliced the bread too thin (1/2 inch?) and it was way too burned to eat comfortably. I would advise an inch thick slice. Doubt I will try this again. Very hard to improve on a simple roast chicken!

Pumpkin Fudge

What a wonderful recipe!! Made exactly as described and it turned out perfectly both times. First time I added nuts to the top but many of them fell off, so this time I put them in the bottom of the pan, along with a dusting of kosher salt (I like salty and sweet!). Everyone who tries this fudge goes crazy for it! Thanks for the recipe!!

Ghirardelli® Hot Fudge Sauce

I only let the sauce cook for about 6 minutes....the sugar was melted and it was about as thick as I wanted it (and I didn't want chocolate taffy!). Very easy and just what I wanted for my peppermint ice cream!

Ghirardelli® Chocolate Saltine Toffee

It's so funny to make toffee on saltines, but it works! My pan only held 54 crackers, and I used a whole 11.5oz bag of chips (don't think 5 oz would be nearly enough). I've seen the other recipes that call for baking the toffee, but I trust my thermometer more, and this turned out just perfect. TRY IT!! Update in review: Just made a half batch, couldn't stand it anymore, had to have it! One tip, for those who have problems making the almonds stick: toast them on the stove and keep warm until you need them. That way, the heat from the almonds will help melt them into the chocolate. (also a good thing to do when you're making peanut brittle!). Since I have discovered how wonderful sweet and savory are together, I also sprinkled kosher salt on top...elevates this treat to a new level!

Cheesy Ranch Chex® Mix

I used the ingredients called for plus some mixed nuts, drizzled the butter a little at a time and stirred, then put about a third in a large paper bag, added 1/3 of seasoning, another 1/3 mix, 1/3 seasoning...you get it...and shook it all up (but not too vigorously or it turns to dust!). If you don't just dump the seasoning in, it shouldn't clump on you. Overall, I'm happy with the results but I think next time I will up the seasoning to 1 1/2 or 2 packets. Oh, I also left out the parmesan since I'm not serving it until next week and I don't want to take a chance on it going bad....

Grilled Bacon Jalapeno Wraps

used chive cream cheese and turkey bacon, froze before grilling...used jalapenos out of my garden and wish they had been a touch hotter, but this was a great snack/appetizer! And I was wondering what to do with all those peppers....

Grilled Pork Chops with Fresh Nectarine Salsa

I let the rub soak into the chops (and used bone-in) for a couple of hours, otherwise I followed the recipe...it was very tasty, really liked the salsa. Would have given 4 1/2 stars if it was possible, not quite sublime enough for 5 but quick and will do again, maybe with more spice next time...?

Pan-Seared Duck Breast with Blueberry Sauce

Oh wow!! I was a little skeptical about the combination of duck/blueberries/bokchoy but it was SOOOO tasty!! I was cooking for 2 and cut everything in half but used a whole jalapeno and about half of the sugar in the sauce. Also had to do without pancetta as the piece I had in the fridge was bad and I was out of bacon...but oh MY this was one tasty meal! My only "issue" is that the potatoes, while tasty, were not quite right with the rest of the meal... maybe a nice rice pilaf or a salad....

Creamy Corn Salad

I used thawed, frozen corn (MUCH closer to fresh than canned), chopped grape tomatoes, and also added salt, pepper, maybe 1 tbs sugar, and a little vinegar to cut the mayo a bit....very easy, very tasty, will make again for sure!

Cognac Shrimp

This recipe LIED...I don't see how it can POSSIBLY feed 4 people...the 2 of us put it away quite nicely (and I would have had more, if there had been any!). I used brandy intead of cognac, added cherry tomatoes to warm through, and served over rice spaghetti (for my gluten-intolerant sweetie)...I will be making this one again, for sure!!

WOW, if you're looking for sweet, this is it!! I was looking to use up some ingredients on hand and found this recipe. I couldn't bring myself to add a full cup of powdered sugar to the meringue, only added 1/2 and that may have been too much! I wasn't sure what I was looking for as far as "thick" goes so I did cook it for 30 minutes. This is rather like a caramel pudding when it's set, and the texture is very smooth and nice...but it is REALLY rich and sweet! Thank you, Fran =)

Baked Flan

This turned out just perfect! (at least, the second time...first time, the pyrex dish the flan was cooking in exploded in the oven! what is THAT about??) anyway, my sweetie was SO proud of himself for making this himself and got rave reviews from the family...thanks!!

Spanish Cod

instead of tomato sauce, I used a can of chopped tomatoes, seasoned w/hot paprika...it was good to use some of my pickled vegetables up, and it added a nice bite. This was as good or better than anything you could get in a restaurant, and really easy...I'll be making this again, thanks!!!

I used the advice of others and added less lemon juice, and I also added some fat-free plain yogurt and chopped mint for a more mediterranean flavor... the couscous soaked up the liquids well and it was tasty for days!

Health Nut Blueberry Muffins

I used 1/2 cup oatmeal (didn't have oat bran), left out the banana (only because I didn't have any handy), forgot to add the veg oil, and used sliced almonds (because I had them), and probably added just a few more blueberries, and we've been eating them all week (one at a time, they ARE filling!). I'll be doing this again soon!!
