Asian Orange Chicken

Reviewed: Feb. 25, 2009
5 stars with using a lot of suggested changes. You GOTTA dip in egg first before coating, double dipping is better. and I changed 1/4 cup of water for more OJ, cut the sugar in half, used more chili flakes, and next time will only use 2 TB cornstarch. Perfect.

Colombian Aji

Reviewed: Oct. 12, 2008
This was a great with grilled steak. This was a nice alternative to salsa. And I didn't need to add any salt. it already had enough flavor to it. Recipe makes more of a party batch than a family batch.

Kofta

Reviewed: Feb. 25, 2008
This gets 4 stars only after I changed it quite a bit. I didn't even try the recipe as printed because it looks so bland.I added 3 TB dry chili flakes. 2TB each minced ginger & garlic. 1 small diced red onion. 1 whole egg instead of just the yolk, and a bunch of chopped fresh cilantro. I think you would normally do parsley instead of cilantro but I just love cilantro.

Five-Veggie Stir-Fry

Reviewed: Jan. 16, 2008
I did not care for this dish at all but my husband loved it so I will make it again with some improvements. less sugar and oj would have been better. Also I would reduce the stir fry time because by the time you add the sauce and boil it to thicken it up, the veggies are already pretty cooked and it would result in soggy stir fry.

Cake Mix Cookies IV

Reviewed: Dec. 28, 2007
these were great and easy to make. I made a bunch of cookies for christmas and though they weren't the best of the bunch, they were up there and by far the easiest to make. To pick them up a bit, before baking, I divided each cookie into two, put a dollop of chocolate frosting between them and sandwiched the two halves together, sealing the sides of the cookie so the chocolate wouldn't escape. They were a hit.

Hot and Sour Chinese Eggplant

Reviewed: Nov. 8, 2007
I love eggplant cooked in this way. I used globe eggplants instead and it took much longer to stir fry- at least 15 minutes- to get to that soft texture that you find in a restaurant. It was way too spicy for my husband- he couldn't even eat it. I like it a little spicy but it was just too much. Next time I will leave out all chili and just add a little bit of crushed red pepper flakes. I will also double the sauce. With those changes, I see this becoming a regular dish in my house.

Kerry's Beany Salad

Reviewed: Sep. 22, 2007
This was great. I used all white rice because I had a lot of leftovers and I cut the oil in half. It's better made in advance so the flavors can set in.

Unsloppy Joes

Reviewed: Aug. 22, 2007
Overall this is a tasty, easy, and healthy recipe. Instead of the chili pepper I used just a pinch of ground cayenne and the amount of spice was perfect. My husband didn't like the carrots in them because of the texture so next time I will grate them.

Zucchini Herb Casserole

Reviewed: Jan. 22, 2007
This was Really good- my husband liked it and I went back for seconds. I used about 1/2 cup of rice and put a little chicken bouillon in the water. I eyeballed the cheese but I think I used just a little under the amount in the recipe. I used about 4 cloves minced garlic and put in more seasonings to taste. I think it would have been bland for me without the changes.
