Mom's Zucchini Bread
Really good, easy recipe for zucchini bread! I tend to be disappointed with banana and zucchini bread recipes that turn out somewhat dry. This one was perfect: moist, sweet, and just doughy enough to make me double-check to make sure I'd cooked it through (I had!).

Carrot Cake III
Excellent, excellent! I've always shied away from making from-scratch cakes, because I've had trouble getting them to taste right or to be moist enough. But this cake was wonderful. (I didn't make the icing, so I can't speak to that.) In the interest of lowering the fat content, I reduced the oil a little and adding some applesauce and crushed pineapple. The cake came out plenty moist and rich, so I might be a little bolder in replacing some of the oil with applesauce next time. The pineapple was yummy, but I may try it without next time--just depends on what you're in the mood for. I made a layer cake with 9-inch round pans and baked them for 40 minutes at 350.

Apple-Cranberry Crisp
This was really yummy! I made it for a Thanksgiving dessert, and it was lovely--very fall-appropriate, not TOO sweet, and wonderful flavor.
