Maple Salmon

This was delicious. I made double the marinade, and I also used the foil to wrap it up instead of a shallow baking dish. We had a large supply of Salmon from a fishing trip in Canada. My family loved this recipe, and we weren't out of Salmon in no time at all!

Double Layer Pumpkin Pie

I had a large group for Thanksgiving this year, and about half of my guests thought this lacked spice and flavor. I loved the creamy texture. I don't think I will make it again though.

Aunt Anne's Coffee Cake

This coffee cake turned out pretty good. I used half brown sugar and half regular sugar for the streusel topping. I didn't have any trouble with it melting down through the cake.

Spinach and Cheese Stuffed Pasta Shells

I used manicotti shells, and added some mozzarella to the filling. I also made half with fennel and half without. I preferred without fennel, and I added some mozzarella and sauce on top before baking.

Cashew Crusted Chicken

My husband and I LOVED this recipe. Thank you so much. I poured the extra sauce over the chicken for added flavor and presentation. The chicken had such a kick. We will definitely make it again.

Garbanzo Tomato Pasta Soup

My husband loved this recipe. I used diced tomatoes with basil, oregano, and garlic in them. I also used an extra cup of chicken stock, not vegetable. This smells and tastes delicious, and it freezes well too.

Eggplant Sandwiches

This was very yummy. Fresh basil really added a lot of flavor. The eggplant turned out very good on the grill...some of it got soggy, but I think I used too much oil on those ones. Thanks for the vegetarian sandwich idea :)

Chicken with Lemon-Caper Sauce

This recipe was just ok. It seemed to tart. It may have been the wine I used, but it almost tasted like too much lemon. If I make this again, I will opt for less lemon and add garlic.

Lasagna Roll Ups

These were easy to make, easy to freeze, and very filling. I used whole wheat pasta to add more fiber. They turned out great.
