Brisket with BBQ Sauce

Fabulous brisket and turns out better looking than the picture. The brisket is perfect without pouring the sauce on and cooking for another hour. The barbecue sauce however is excellent! I decrease the amount of liquid smoke in the sauce and only add a dash. Otherwise it seems to over power. We use the sauce to top with after serving. Everyone has raved about this when i have prepared it.

Maine Wild Blueberry Salsa

Refreshing dish makes great side. Kept it simple and used chopped cherry tomatoes and passed on all the work of removing seeds. Used purple onion and subbed lime for rice vinegar and serrano for jalapeno pepper. Enjoyed this dish, blueberries complemented other ingredients nicely. I served with crumb coated chicken thighs from this site.

Fresh Cranberry Relish

Sorry...not crazy about this recipe. Took it to a luncheon and it was not a big hit. Not as much flavor as i would have liked. Maybe I ran the processor too long because the texture wasn't that appealing. Love fresh cranberries but they seemed to overwhelm this dish to me.

Parmesan Sage Pork Chops

Fantastic Gourmet meal! My husband said he would pay $35 for this chop at a nice restaurant I followed recipe as written and noted it called for SOFT bread crumbs not dry. I put a piece of bread (gourmet size) in my small food processor and it came out to be 3/4 c exactly. My parmesan was shredded type and I did use 2 TBSP olive oil and no butter. 2 large bone in chops used all the breading. Unbelievably moist and as noted by others the lemon zest and sage add such a nice flavor. Loved hearing my husband rave about it!

Good Old Fashioned Pancakes

I make these pancakes every Sunday morning. My substitutions are canola oil versus butter and egg beaters versus eggs. I also add about 1/4 cup more milk. Adding fresh blueberries really kick it up a notch too. Sometimes I use buttermilk instead of milk. All my subs are to make a little healthier. If I don't make them on Sunday my husband whines big time!

Chicken Breasts Pierre

Not loving this dish. My husband said it was confused...is it chili or a tomato sauce? I cut the chili powder in half and it was still too much for me. I expected so much more with all the high ratings. It was like a barbecue sauce with chili powder.

Crumb-Coated Chicken Thighs

Fabulous! My husband said I was becoming a great cook...he loved them. Only thing I did different was to make my own bread crumbs in mini food processor because I didn't have any. Otherwise, made exactly like recipe. I also used boneless chicken thighs but the cooking time i kept the same. Surprisingly moist.

Ancho Honey Mustard Sauce

Wow! What a great sauce. It was easy to make and was absolutely wonderful. I didn't have any ancho chili powder so I used Chipolte Chili Powder. It carried a pretty big kick. Ancho might not be as spicy so I would probably cut back a little of the chili powder if i were to use chipolte again. I made to use with chicken tenders but decided to make into a spinach salad with tenders on the top and used the sauce as a dressing. Awww...it was so good. Used white corn and black beans as a side. WTG cheffjeff

Easter Basket Cake

Fun! I used a chocolate cake with white icing and it does take 2 cans of frosting. Loved the coconut grass, it is so cute. Had a great time making this cake and using my imagination on the decorations. My husband was surprised i was doing something so clever.
