Meatloaf With A Bite

As good as it can get for a different twist on meatloaf. I followed the recipe, but did as others suggested and added a little more spice; ie, a little bit of taco seasoning. I used a muffin pan and baked little meatloaf balls in that at 350 for 35 mins. It was moist but not 'wet'. Surprisingly really good! Served with Mexican rice and a salad it was a tasty meal.

Buttermilk Pancakes II

The only problem with these is they're so good, you eat too many! Wonderful flavor, light and fluffy. I added a teaspoon of Vanilla for an added boost. Great pancakes for Sunday morning tradition. Thanks for sharing.

Hobart's Chicken and Red Bean Soup

Oh so yummy! Thanks for sharing. Upon others' advice, I used low sodium chicken stock substituted for water and added a can navy beans as well. The whole family loved it.

Tropical Coconut Black Bean Soup

Very good! I think next time I'll use a regular can of coconut milk (not enough of a hint in this one) a little more lime and add some avocado. I followed other's advice and pureed half of the soup then added more black beans, peas and a can of corn. The suggestion about the spices were helpful too as I couldn't find "Mexican-seasoned" beans. This one's going into rotation around here. Very good too with the banana chips on top, makes the whole soup that much better! YUMM! Thanks for sharing this recipe.

Baked Scallops

Very good, especially after adding the juice of one fresh lime and a dash of red pepper. Served with jasmine rice, butternut squash and a medley of steamed veggies. YUMM! Thanks for sharing.

No Roll Pie Crust II

Very good. After reading the reviews I added extra sugar to the mix and I also substituted coconut oil for canola. Gave it a real nutty kind of flavor. The crust turned out beautifully with a flaky texture and rich flavor...a great compliment to go with the pumpkin I poured into it.

Way too much sugar for my liking. I think I'll cut back next time and add a little salt. Baking soda too maybe better if halved. All in all a good light fluffy pancake.

Wonderful 'base' recipe. This one is definitely a keeper. I also tweaked a bit. I omitted the sunflower and maple syrup and I added as other suggested the coconut oil instead of veg. oil. I also added dried banana chips and pineapple along with the cranberries. I bet anything you add to this would be good in many variations. Thank you Annie9!

Baked Chicken Nuggets

As others suggested, I halved the salt, and other spices adding a touch of cayenne pepper. I soured my milk by adding vinegar and let the chicken soak overnight (as per Alton Brown's suggestion when making his fried chicken) Anyway, these were really really good. My girls ate them in no time asking for more. Great picnic food, they're even good served cold!!!! This one's a keeper!

Curried Chicken Soup with Chickpeas and Cauliflower

This was super tasty! I did tweak to our liking by adding 3 TBL curry as others suggested, leaving the extra water out and only using 2 quarts chicken stock. I also added 1 TBL cumin and about 1 cup of cooked rice. Fantastic soup and this one going in rotation around here. Yummy! Thanks!

Christmas Breakfast Casserole

We've used a similar recipe for years Christmas morning. Instead of the bacon, I brown 1 lb of turkey sauage. It's delicious topped with some extra sharp cheddar cheese.

Cheesy Corned Beef Hash Casserole

We made for dinner and added a little bit of garlic along with about 1/4 cup Parmesean/Romano shredded cheese to mixture. It was alright, but nothing I'll probably make again.
