With a crazy household, dinner seems to be the last thing on my mind most days.  You would think by now having a two year old and a seven year old I would have a plan in action each day.  Not the case, the past few months have left more pizza on our doorstep than I care to admit.  I admit I… MORE

About this Cook
Stay at home mom of two wonderful little boys! We spend a lot of time outdoors when the weather gets nice. Cooking is a way for me to relax if everyone stays out of my way. I love to read cookbooks and the internet, always searching for that perfect recipe to make. I love to challenge myself and my family by trying new things. We used to go out to eat a lot but now we are spending less money and more time at home creating our favorite dishes.
My favorite things to cook
Dessert!!!!I love every step of it but especially the final product and making it fancy. I also really enjoy finding unique and interesting recipes and trying it out. My family doesn't always enjoy my adventurous cooking but they have learned to accept and eat it!
My favorite family cooking traditions
This would have to be our bacon log. This started years ago with an annual bacon party with friends. We stating making this for most holiday events. It's a favorite since you can never go wrong with bacon at our house!
My cooking triumphs
It's always big deal when I can get a holiday meal on the table at the same time! Also when I can get everyone to eat what's on the table without complaint and even better is when they say they like it.
My cooking tragedies
I actually blew up a stove!!!! Not my fault it was new and they screwed the handle on to tightly when they installed it. Once the oven warmed up the glass expanded and shattered!!!

Japanese Beef Stir-Fry
This was a great recipe! I did add some garlic and a little red pepper to spice it up a bit. This will become part of our monthly rotation. Easy and flavorful.

Sweet and Spicy Salmon with Grapefruit Salsa
We liked the rub and it had a nice flavor. The grapefruit salsa didn't go with the fish at all for us. A different fruit subbed would be better. Not sure I will make this again.

Pork Carnitas with Cilantro Tomatillo Sauce
We really enjoyed these but I did add more seasoning and used a hotter chili powder. We liked how the flavor a melded together and the salsa have it a bright addition to the flavor.
