Perfect - even better than my moms!! At least I thought! I never made Lemon pie before - I made two - the second pie (one piece) stayed in the refrig. for 6 days and was still wonderful - the crust started to get a bit damp - course I used my mom's pie crust recipe - which I will enter someday. Also used Meringue II by Sandra - the only thing there I did diff. was to cook the top three ingreds. over low heat till clear. It was also perfect - and was still stuck to the top of the pie after 6 days - no weaping - perfect!! I used the BEST pie crust - lard - vinegar - water - egg etc. I'm sure any pie would start to get a bit soggy after 6 days!! Even yours!

Obviously your pie crust needs some enhansing - try this:
3 cups flour
1 tsp. salt
1 1/4 cups lard
1 egg well beaten
5 Tabl. cold water
1 Tabls. Vinegar
Cut lard into flour and salt, mixing well. In another bowl mix egg, water and vinegar. Clump second mixture into first. This gets sticky---keep at it. Form into two balll and chill for 30 mins. before rolling out flour surface - if you mess up---just roll it out again---can't mess up with this crust - its the BEST!!!
