Grandma's Lemon Meringue Pie

Reviewed: Jan. 2, 2007
Perfect - even better than my moms!! At least I thought! I never made Lemon pie before - I made two - the second pie (one piece) stayed in the refrig. for 6 days and was still wonderful - the crust started to get a bit damp - course I used my mom's pie crust recipe - which I will enter someday. Also used Meringue II by Sandra - the only thing there I did diff. was to cook the top three ingreds. over low heat till clear. It was also perfect - and was still stuck to the top of the pie after 6 days - no weaping - perfect!! I used the BEST pie crust - lard - vinegar - water - egg etc. I'm sure any pie would start to get a bit soggy after 6 days!! Even yours! Dear "FOOD LOVER" Obviously your pie crust needs some enhansing - try this: 3 cups flour 1 tsp. salt 1 1/4 cups lard 1 egg well beaten 5 Tabl. cold water 1 Tabls. Vinegar Cut lard into flour and salt, mixing well. In another bowl mix egg, water and vinegar. Clump second mixture into first. This gets sticky---keep at it. Form into two balll and chill for 30 mins. before rolling out flour surface - if you mess up---just roll it out again---can't mess up with this crust - its the BEST!!!

Cinnamon Hazelnut Biscotti

Reviewed: Jan. 3, 2007
LOVED-LOVED-LOVED'EM!! I did the 1/2 cup butter - extra cinnamon - shared the vanilla with almond extract and used almonds. I also baked them in my convection oven at 330 degrees for the same amount of time - took them out and cut them right away - not one broke - put them back in and baked them again for 10 mins. on each side - on the second side I shut the oven off after 10 minutes and just let them set there for about 15 or so minutes. They were very crisp like biscotti should be - very easy to handle during the dough stage and the taste was devine!! Used dark and white chocolate on some - and left some plain. First time I ever made biscotti - used to eat them frequently at a gourmet coffee/candy store that I managed ---these were better!! Thanks!! 11-5-14 Just finished making two batches of biscotti doing the usual almond with one batch while doing coconut/walnut with the other - I use coconut extract also. With white chocolate on top - their kinda hard to beat...unless your not a coconut fan. I have to admit - my husband and I like a biscotti at night for dessert - we may have it with a cup of chai or....nothing ;)

WONDERFUL! I tweeked it along with "Ultimate Irresitable Granola" Both are fab! I used the "Splenda" br. sugar - 1/4 cup - and 1 cup honey. Also cut back 1/2cup on the wheat germ and oat bran for 1 cup flax seed that I ground. Instead of sunflowers seeds I used pumpkin seeds. This is so healthy - just got to remember all the carbs. and calories! :(

Never had Portabello mushrooms before--this made a GREAT sandwich - can't waite to make it for my sister & hubby when they come to visit. So easy & so good! We did add to it a bit--thin sliced avacado sprinkled with garlic & salt - a thin sliced tomattoe - swiss cheese and thinly sliced onion sauted in butter--yummm! Along with whole wheat bread toasted. The best sandwich I've ever had--and I'm almost as old as dirt!!!

Slow Cooker Stuffing

Reviewed: Nov. 26, 2007
My family thought this was FAB!! This is the first time I've made dressing outside the turkey - everyone raved! I put everything except the eggs and broth tog. the night before - even sauteed the celery, onion and mushrooms and put them in a seperate container. As an OLD family tradition we ALWAYS put rasins in dressing - the more I put in the happier everyone is!! I WILL NEVER STUFF A TURKEY AGAIN - WE LIKED IT BETTER - AND NOT NEAR THE MESS!! THANKS!

Hot Mustard Pretzel Dip

Reviewed: Dec. 23, 2007
FANTASTIC!!! I hate to say I changed something - but I did. Instead of plain vinegar - I used Raspberry Blush Vinegar" and threw in a bunch of mustard seed after cooking. If you look at the ingreds. list on "Raspberry Honeymustard Pretzel Dip" those are two of the ingreds. not shown in this recipe. I highly suggest them. Thanks for the recipe - its grrrrreat!!
