Sweet Chili Thai Sauce

This sauce is awesome! I made it for a party with small pieces of chicken and two other sauces. Everyone raved it! I mixed the leftovers with stir fry veggies and chicken, and it was so good! I did halve the sugar and double the cornstarch. It was sweet but def. spicy! I didn't use peppers, but a tsp. of chile (rooster) sauce.

To Die For Blueberry Muffins

Had this recipe in my box from a long time ago. Couldn't remember what I'd thought of them, so I tried it again. Soooo good! I used blueberries I had frozen in the summer (freeze flat on a cookie sheet, so they aren't icy-crusted) and they worked perfectly! Not purple at all. I used a 12-muffin tin and only used half the topping. They're perfect! Loaded with blueberries. I considered vanilla, but forgot to put it in, and they were fine--it's not necessary. My kids and I devoured them--def. my go-to for company breakfast!

Honey-Glazed Pork Chops

Hubby and I thought these were good. Kids, not so much. They thought they were too sweet--honestly, children, I'm not sure how to please you. I think I'll look for a glaze with a deeper sweetness if that makes sense. Maybe a few more flavor notes like maple or cranberry, instead of just sugar and honey. I used boneless chops and just cooked them a little shorter time. As with any pork, don't overcook or it will be dry and tough!

Chocolate Pudding Cake III

This cake is to die for!! Super easy to make and just decadent! It looks kinda funky when it comes out, but it is awesome! It really does come together quickly. I didn't think it would, but I mixed up quick and it baked while we ate and was cool enough to eat once we were ready for dessert. Awesome with ice cream!

Best Big, Fat, Chewy Chocolate Chip Cookie

I thought these were a little too brown sugary for me. Huge and chewy and chocolatey, they were just what they said they would be. I've not met a chocolate chip cookie I didn't like. We ate all of these. V. good, but a little too sweet for me.

Buttermilk Pancakes II

Definitely DON'T overstir!! The batter will be super lumpy!! I made the first griddleful and they were puffy and thick, I stirred the batter a little more to get rid of lumps. The rest of the pancakes were thin and more like Swedish pancakes or crepes. The taste was really good, but personally I like my pancakes thicker and heartier. These were pretty airy.

French Breakfast Muffins

These were a little "nutmeg-y" for me. I would prefer a cinnamon-brown sugar crunch mixed in instead. The C/S crunch on top was good! The texture was also really dense and yummy, and they were nice sized--small, but not tiny. I think I'll try them next time with a brown sugar/cinnamon mix swirled in (or like one reviewer said, with vanilla and blueberries)

Eclairs II

These were awesome! I made the "doughnut" part a little smaller to make more and then used a pastry tube to fill them instead of cutting them open. I think I was able to fill them fuller that way, though I still had some left over (the filling, by the way, was awesome!). The icing I let everyone put on themselves. I served it at a girl's night out party and everyone loved them and were impressed I'd made them myself--I have three little ones at home! They were a little messy to fill, but totally worth it!

Soft Sugar Cookies IV

These were definitely not "the best sugar cookies I've ever tasted". The texture was good--soft and chewy like it said, but they were really bland, kinda tasted like snickerdoodles without the cinnamon. I had to roll then in sugar and ice them with buttercream frosting to get any kind of *sugar cookie* flavor. Even my two little boys didn't care for them, and they'll usually eat any cookies. Definitely not a make again!
