Asparagus, Chicken and Penne Pasta

This was really good, but I made a few small adjustments. I cooked the chicken and asparagus in chicken stock and cut down on the red pepper flakes. The chicken stock kept it from being dry and added some more depth to the recipe. Next time I'll try it with white wine as suggested in other reviews. This was a nice, light dinner; great for a spring day.

Vegetables with Brown Rice

This was definitely easy, but I found it to be rather bland, especially standing up against the brown rice. It needs more seasoning.

Homemade Black Bean Veggie Burgers

These were really great! I made the recipe as directed except I added some chopped jalepenos to the mix a bigger kick. For the last five minutes of their cooktime I put the broiler on and add some cheese to the top to be melted. Will definitely make again!!

Creole Butter Beans

This was so good!!! I used frozen lima beans that I thawed in the microwave just because my grocery store didn't have canned butter beans. I'm originally from Louisiana and have been searching for a lima bean recipe that tastes the way my mom's did. These are better than hers!!

Fajita Marinade I

This was an absolutely wonderful fajita marinade. Because I found the recipe so late in the day, I was only able to marinade the chicken for two hours and the fajitas still turned out great. I can't wait until I make this again, so I can marinade the chicken overnight. If it tasted this good being in the frig for two hours, I'm sure it will be great after marinading overnight.

Mexican Rice I

This was really good! After reading others reviews, I used Rotel tomatoes (about 1/2 of the can and all the juice). Since I used all the juice from the Rotel, I only used a cup of water. Also, I sauted half of a jalepeno chopped up and 1 tsp. of minced garlic with the onions. As for the seasoning I just used heaping 1/2 tsps of cumin and chili powder. The flavor turned out great!

Easy Lima Beans

When I first found this recipe and read the reviews, I was really excited. I thought maybe I had found an easy way to make lima beans taste the way I remembered them tasting when my mom made them. After trying the recipe out, I was so disappointed. These were so BLAND. I even added some extra seasoning because of the reviews. These need a lot of seasoning!!!!
