Baklava

Reviewed: Jan. 25, 2011
We visited a charming Greek community in Tarpon Springs, Florida and enjoyed their authentic Baklava. This recipe is extremely close to theirs. If my memory does not fail me.... it is almost identical. My 16 year old daughter and I made this for our German family and everyone had a fit over it. I used 1/2 pistachios and 1/2 walnuts because we favor pistachios but I believe the lovely Greek use walnuts. I made extra sauce ( 1 cup of honey) and cooled it before I poured it on the Baklava. Make sure to cut the squares in diagonal before baking. I also kept this dessert uncovered for 2 days. It never became soggy or mushy. The layers remained crisp just like they should be. I made it on Friday and it was gone by Sunday night. Thank you for an amazing recipe=D Will definitely make again!!

Old Fashioned Peach Cobbler

Reviewed: Aug. 29, 2008
Good recipe but lacks a little flavor. I think it could use vanilla extract or I personally like almond extract with peaches. Would make again and try adding additional flavor.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Apr. 2, 2008
These are really great cookies and I made them as written with no changes. The entire family liked them. I baked a few cookies a little longer to make them crispier. Half of my family likes their cookies crisp while the other half likes them chewy and soft. So, you can get the best of both worlds with this recipe. We did taste a hint of spices which were not overwhelming at all. I think the spices were just right. However, next time I make these I will delete the shortening and add applesauce and delete the eggs and double the egg whites to lessen the fat content.

Mouse's Macaroni and Cheese

Reviewed: Mar. 20, 2008
My family really liked this recipe. The only change I made was that I omitted the bread crumbs. It is a very creamy macaroni and cheese. I have tried others and they have turned out dry. Not this one! If your are looking for creamy then stop lookin'. We ate it again for lunch and guess what? Still creamy!

Eclair Cake

Reviewed: Jan. 29, 2008
A++++ I love, love, love this recipe! So easy and delicious. I made this for my parents 39th anniversary! I chose this recipe because it reminded me of a dessert that we all enjoy when we are in Florida. My parents couldn't believe how close it was to the famous restaurant's version. I made the cake exactly as the recipe states. However, I did not use the canned frosting because we do not like canned frosting. I used the chocolate glaze recipe found here. It was sooo beautiful. I then drizzled white icing over the glaze and it looked quite fancy! I highly suggest kicking it up a notch with homemade icing. You'll be appreciated!

Satiny Chocolate Glaze

Reviewed: Jan. 29, 2008
Excellent recipe for chocolate glaze. This chocolate hardens to such a lovely glaze. The taste is delicious! I made this exactly as the recipe states and am quite happy with the results. My family loved it. I also, made a white glaze to drizzle over the top. The nice thing about this recipe is that the chocolate takes a while to set up so you have time to add designs with other confectionary into the chocolate. A+ thanks!!!

Pecan Apple Pie

Reviewed: Oct. 2, 2007
This is really good. I baked this pie until it was done and then I took it out of the oven and poured 1/2 jar of Tastefully Simple Caramel over it. I melted the caramel in the microwave for about 30 seconds so that I could pour it. Mmmmm. I put it back in the oven for about 5 minutes or so. This pie was heaping full in the oven and I was worried that it would ooze over but it didn't. My husband said it was very good. Kids really liked it too.

German Chocolate Cake III

Reviewed: Sep. 2, 2007
I made this for my dad's birthday. We have had a German chocolate cake for him since I can remember. Everyone loved this cake and said it was the best one that we've had. I did not have any trouble with this cake or the icing at all. I put parchment in the bottom of cake pans. I let them cool over night. The next day I iced the cake. I did add a little cornstarch and water to the frosting while I cooked it. It thickened up nicely. It tasted great and was easy to work with. I will say that this recipe is extremely similar to the one inside the Baker's German Chocolate box, which is the chocolate that I used.

Zucchini Pie II

Reviewed: Aug. 16, 2007
This is a great way to utilize your extra zucchini. We made zucchini cobbler as well, but the pie was everyone's favorite. I will make this again when I have extra zucchini. My kids liked this pie too!

Zucchini Cobbler

Reviewed: Aug. 9, 2007
This is really good. My kids even liked it. We had fun fooling people. They thought it was apple cobbler. I will make this again soon. I de-seeded a large zucchini and added oatmeal to the topping. I also added more brown sugar as others suggested. This recipe is a keeper. Thanks for sharing it!!

Peanut Butter Bars VI

Reviewed: Jul. 6, 2007
My 12 year old daughter found this recipe and made these. She loves them! However, you must use a 8 or 9 inch square pan or double the recipe because it does not make enough for a 9x13 inch pan. These are simple and delicious and great for the kids to make.

Brown Sugar Meatloaf

Reviewed: Apr. 5, 2007
Great recipe! Kids liked the glaze. I put a very thin layer of brown sugar and ketchup on botton of baking dish and reserved the majority of it for the top of the meatloaf as prior reviews suggested.
