Lentil Chili

This is a marvelous dish. I have a little suggestion for those who are a little timid around spicy foods. Instead of adding more chili powder, (which tends to overwhelm the flavor,) I suggest dicing anaheim chili peppers. One nice large crisp one is a good starter, they are very mild and extremely flavorful, I even add them to my chicken soups etc. Enjoy, and God bless. Wolf

Incredible Chicken

After reading the ingrediants in this recipe I had mixed thoughts, "perhaps they left out a few things, or..." Well, it was so wierd I had to try it... I just took it out of the oven, took the least enjoyable piece for my taste, (a leg,) and ran to the computer to "rate 'n rave"... The only thing I added was a little Mrs.Dash reg. seasoning... All I can say is, if you fail making this, go to the colonel's and stay out of the kitchen. I'm looking forward to making this for the next church pot luck dinner... Mmmmmmm... What a blessing this will be...

Twice Baked Potatoes

Great stuff :)... Big winner, strongly suggested for the upcoming play offs... I grilled market steaks and sliced them over the top of each, then as a side I put out saute' onions, mushrooms, chives, bacon bits, and sour cream. Don't re-heat the meat if you are melting cheese on top, makes it over cooked 'n rubbery... Mmmm, Thanks...

Crispy Fish Fillets

I love fish! fried, pouched, steamed, baked, grilled, it doesn't matter. However, when I tried this recipe, I almost quit doing all the above. This fish is sooo crispy and moist. You can't ask for better tasting fried fish. Hmm, in fact, I'm going to cook some up right now for my wife 'n I. Mmmmm Pastor Jack

Country Chicken

This is a wonderful recipe, I encourage those who found it blan, etc. to read the reviews paying attention to some great suggestions. I made this and instead of bell peppers, I used a few anaheim peppers instead. I also payed attention to the "down sides" mentioned and it turned out wonderful. If nothing more, it is a wonderful base, so don't just knock it, play with it, become creative. Fun, fun, fun... Wolf...

Greeked Zucchini

Made this twice, once as written, then next with the revized directions by 'famouscook', and as a consideration, I didn't review the first try. However, I love zucchini and tried the second time with wonderful results. I don't know who you are, but I love you... : ) Gave YOU five stars.

Braised Beef Short Ribs

Mmmmmmm, Mmm! Very few changes, I used 1/2 the broth it calls for, and used one pkg of onion soup mix. in addition.I also used cornstarch to thicken the sauce a little. The last time I made this, I chopped up a couple of Aneheim peppers and added it for a little more zip, (BAM, in Emeril's terms.) For those of you who are afraid of the word 'chili peppers' Aneheims are not hot at all, however, you may discard the seeds if you wish. My grand daughter loves them, and she's only eleven. (not latin either.) If you've never tried this recipe before, read the reviews first and pay attention to the repeated changes, it will make it worth all your time and effort.

Cioppino

Every yr. I celebrate my b'day with a cioppino party. An expensive dish that required some clever thought. I have every guest bring a crab and a choice of one of the other ingredients. They love to participate, makes for a family athmosphere. This recipe is by far the greatest in my years of cioppino experience. This was my seventy second b'day dinner and I had to promise to envite the same people again. Five big shooting stars for this one. I changed nothing, added nothing. When I tasted the sauce, I was tempted to grab a loaf of sour dough and have at it. One thing, I allowed it to cook down a little so it wasn't so soupy. It clinged to everything and everybody. : )

Simple Savory Pork Roast

This was a great recipe, however, I used my "Show Time" rotisserie to cook it. I marinated it in the ingredients overnight. Not sure that was necessary, but it worked out fine for me. Three pound roast took about an hour and a half.

N'Awlins Stuffed Bell Peppers

This is a wonderful recipe. I did make a few changes to "cut down" the servings. I also used very lean ground beef and Italian Sausage (50-50)The sausage comes in reg,mild, and spicy. I used spicy. I also cut the tops off the peppers at an angle close to the stem, remove the seed pod and when I finish stuffing the pepper I take a slice of cheese and seal the hole just under the edges of the hole. Then I replace the top and cook. The cheese keeps the juices and mix in the pepper and adds a little flavor as well. It also makes for a plesant presentation. I also cooked them on the stove top making a little more sauce to set them in and cover the pot until done. place the pepper in the middle of a plate, pour sauce over the top. Enjoy.
