Cinnamon Ice Cream

Fantastic! I used all milk instead of half & half and cream, just because that's what we had, and it's plenty rich for me. I'll definitely make this again.

Zucchini Pancakes

This recipe passed the preschooler test - my picky 3yo is wolfing down his pancakes as I type this. It's also delicious to adults, and I used whole wheat flour instead of white to make it a little bit healthier. I just wish I hadn't only made a half batch!

Cinnamon Hazelnut Biscotti

These biscotti were very tasty, but the butter-to-flour ratio is off, resulting in a very sticky dough and cookies that spread more than they were intended to. When I make these biscotti again, I will use 1/2 c. butter and start at 2 1/4 c. flour, adding more as needed. I will also bake 10 minutes on each side once the cookies have been sliced - they were definitely not as hard as biscotti are supposed to be.

Apple Crisp IV

This was very good, though the topping didn't get as crisp as I would've liked. I used 2/3 the topping amounts since I was short on ingredients, and that was a good amount of topping for the 2qt of sliced apples.

Zucchini-Chocolate Chip Muffins

Very good! I substituted 1/2c. whole wheat flour for 1/2c. of the white flour, which I think lent a nice hearty flavor & texture. I will definitely make these muffins again!

Rhubarb Muffins

These muffins are very moist, tender, and delicious. I substituted whole wheat flour for half of the all-purpose flour, which gave more of a hearty, nutty, whole-grain flavor. I diced the rhubarb fairly finely, maybe 1/4" pieces, and it sort of melted into the muffins. I might make the pieces larger next time, since I like discernible pieces of fruit in my muffins.

Chocolate Revel Bars

Well, I don't know if kids like it, but the people I cook for at work love things like this and rice krispy bars, so it's similar tastes...They have a ton of calories, though, so cut them small and don't eat too many! Very tasty bars.
