About this Cook
I'm definitely a busy lady, with 4 teenage daughters and a full time job BESIDES them! But one thing we can all appreciate is the pleasure in a good meal. All of my daughters know how to cook, and we all owe some of that to Allrecipes, for the convenience of looking up almost anything!
My favorite things to cook
I love to get creative with chicken and seafood dishes, in particular shellfish. Casseroles are fun to make, because it always feels like I'm a kid again, mixing up random things in a pot to see what it comes out like! On occassion, I enjoy cooking big breakfasts for my family on weekends, that involve "fancy" french toast and "gourmet" potatoes...the kids love it and so do I, when there is time and energy!
My favorite family cooking traditions
I always like it when one of the girls would decide what was for dinner, one night a week - it could be anything, as long as it was nutritionally balanced...we've gotten away from that in recent years, but I think it's time to bring it back!
My cooking triumphs
Definitely "never-fail oven chicken"; I have yet to submit it to Allrecipes, but I plan to; it's been a family recipe for several years, and it's just about the only recipe I can say I truly made up on my own, and truly never fails to please. Crab Cakes are another big one; I never thought I could pull that off, but a recipe on this site made that possible ;-).

Broiled Tilapia Parmesan
This was really great. I was surprised that parmesan would taste so good on fish (and so was my boyfriend)! I did add a little bit of bread crumbs to the cheese mixture, to help out the texture, but in the end, it didn't really matter because the topping doesn't stay under the broiler long enough to really crisp up anyway. So, although a bit on the mushy side, the result was a delicious creamy topping. I recommend broiling on LOW, as when I turned up to high for this last step, the topping quickly started to blacken, but did not get crispy. Delicious!

Chef John's Ham and Potato Soup
This was incredible! I brought it to work and got rave reviews and even I LOVED IT - and I generally don't like soup. But following some basic rules (like how to make a rue, correctly!), it was thick, creamy and super tasty! Thank you Chef John ;)
