Overnight Asparagus Mushroom Strata

i typically follow recipe's to the T upon first attempt but even though i love asparagus, i didn't want any in our breakfast dish. i made this twice already. once for christmas morning (along with red velvet waffles, um YUM) and again for a birthday brunch this morning. i made half the recipe in a smaller dish since it was just for four of us. i cooked the onions, mushrooms and orange pepper. this was a big hit, so simple and my friends loved it. this is one we will be making often. next time i'll take a photo since no one has submitted one!

Mom's Ginger Snaps

i decided to look for a ginger snap recipe so i wouldn't have to buy them at trader joe's :) this was my first try and i will definitely keep making them. i did double the spices, per other reviewers advice. they had a great flavor and i loved the crispness, that is what i think of in a ginger snap. i rolled them really small and rolled the tops in organic sugar. i got 50 good sized cookies out of it. a keeper for sure!

Raspberry Almond Coffeecake

delicious. big hit at my playdate! i doubled the batter and baked in a 9" springform. i used yogurt instead of sour cream, because that is all i had on hand. also swapped out the almonds for pecans. i added some smashed raspberries to the glaze which made it a lovely shade of pink. will be making this again and again.

Coconut Cake II

i have never made a frosting like this before and not sure if mine came out the right consistency, but it tasted good. this cake tasted even better the next day. our dinner guests LOVED it. i added salt and used coconut milk, per other reviews.

Classic Peanut Butter Cookies

this is my go to pb cookie recipe. like other reviewers, i increased the pb by 1/2-1cup. i also used organic, natural, creamy pb. this last time i used 1 cup of pb and about 3/4c of nutella, with amazing results. also increased the flour by 1/2 cup. great recipe that is very forgiving if you add a little here and there.

Aunt Anne's Coffee Cake

this was the first coffee cake recipe i came across that didn't require sour cream, which i didn't have. i baked this in a 9" springform, i don't think it would have covered a 9x13. i added a few tablespoons more milk and a tablespoon of oil, the batter was too dry without it. i spread half the batter, then half the streussel (doubled the recipe but kept the butter the same) and then topped with the rest of the batter. i added the last half of the topping during the last 15 minutes of baking. baked for 40 minutes total. came out lovely, moist and delicious.

Four Egg Yellow Cake

i baked this cake tonight, following other reviews advice to beat the eggs and sugar well and to mix well after each egg. i used all butter as well. i think reading the negative reviews threw me off because i was looking for it to have a corn bread quality. so i tested on my very critical husband and he was very pleased with it. i enjoyed my slice as well. i feel it could use SOMETHING, maybe more vanilla. but a great recipe that i will use again!

Easy Cream Cheese Danish

my husband eats very strictly during the week and freely on sundays. he had been craving danishes but wanted something homemade. i came across this recipe and i'm so glad that i did! i followed the advice of other reviewers and sliced the dough into circles. i made half the amount of filling. these made small, adorable and delicious danishes. they just came out of the oven and i tasted one, hubby has to wait until the morning! thanks for a great recipe!

Homemade Black Bean Veggie Burgers

this made a delicious, moist burger. i used a whole orange bell pepper and used a full cup of bread crumbs. i will go thru the reviews and try some other reviewers suggestions as i enjoy the versatility available with this recipe. it is good as is though (with the extra bread crumbs in my opinion) my six year old formed the patties and we grilled them, had them on multigrain bread with avocado and mayo. delicious!

Corrigan's Minestrone

I made this for the first time tonight, taking the advice of other reviewers. I added 1 can of diced tomatoes, I also sauteed the onions and garlic for a few minutes before adding the other ingredients and waited longer to add the herbs. I used 6 cloves of minced garlic and a 32oz container of organic veggie broth PLUS 3 cups of water. It was very flavorful but when I went to pack up the leftovers, most of the liquid had been absorbed. By the time I read the advice of cutting down on the veggies, it was too late. I would just either use even more broth & water next time or use less veggies. Oh and I added green beans too. A rare dish when the whole family enjoys it, a very picky husband, a 6 year old and 10 month old - all couldn't get enough!
