Creamy Chicken and Wild Rice Soup

Hearty Vegetable Lasagna

I added balsamic vinegar to sauce and used less sauce than recipe calls for. Added shredded carrots. Used uncooked gluten free noodles. Froze well.

Meatball Sandwich

Delish. Used saltines instead of bread crumbs and used hot dog buns and shredded italian cheese. Just what we had on hand. Great basic meatball recipe to work with.

Whole Wheat Honey Bread

Excellent, best whole wheat loaf I have made yet. The first time, I used the whole wheat setting and it came out a little too dense with a very hard crust. However, the second time, I followed another reviewer's advice and used my basic setting with a light crust and it came out perfect. I added about a tablespoon of fresh chopped rosemary for some flavor. Yum.

My Best Clam Chowder

Made changes: added bacon crumbles at end, sautéed veggies in the bacon fat, and subbed clam juice for water and white pepper for black, all per other reviews. Second time: Didn't do bacon or pre-cook veggies; should have. Added sherry, yum. Also used corn starch slurry to thicken instead of flour. A few tablespoons of cornstarch.

Chicken Piccata with Artichoke Hearts

A little soggy, chicken needs to be very crisp and browned to withstand the simmer in the sauce. We added capers. Very tast overall. Served with lemon butter angel hair pasta and sautéed veggies.

Chicken Noodle Soup

Followed recipe exactly. Next time will use broth in place of bouillon/water and add more carrots. Also maybe try in the crockpot or try cooking the chicken in the soup and then shredding later.

Chicken Piccata II

Yummy. We added capers. Takes high heat to brown the chicken enough that it doesn't get soggy when the liquids are added. I had to add additional water to the broth while the chicken cooked as it all boiled out.

Strawberry Jam

This made 6 small 8 oz jars of jam. It appears runny when done but sets once it cools in the jars. Next time I may need to let it keep at rolling boil bit longer. Not quite as thick as we like it.Water bath for processing was 15 minutes in boiling water.

Chili Seasoning Mix II

I doubled everything except the flour. Had to use onion and garlic powders as substitutes so I didn't double. I did not quite double the salt either. I used approx. 2 lbs ground turkey, 2 cans diced tomatoes, 2 cans tomato sauce, 2 cans pinto beans, I can kidney beans, then diluted with about 1 cup chicken broth and 1 cup water. Slow cooker on low. UPDATE: again doubled all but flour AND salt (1.5). about 1/2 cup per single batch of chili.

Refried Beans Without the Refry

We halved the recipe and it was plenty. 4 hours on high and 4 hours on low was MORE than enough time, it probably would have worked at 8 hours on low. After mashing I baked in the oven with shredded cheese on top. Delish.

Easy Meatloaf

I made without breadcrumbs (wheat-free) and it was still good, although a little runny. Probably my fault as I should have reduced the milk to compensate for the lack of bread crumbs.

Artichoke Spinach Lasagna

It was good, but a little soupy. I think the veggie mixture needs a little longer simmer. Also, we only did two layers of noodles in the lasagna. It reheated great, just not my favorite flavors.
