I just finished the first "unit" in the Cooking Roadmap online course at Rouxbe. It was mostly about using a chef's knife. I've become pretty proficient with my chef's knife. I wanted to see if making your chicken stock from scratch makes a difference in taste. It has been simmering for 90 minutes so far and all I can say is that the smell is wonderful! I'm taking cooking lessons on rouxbe.com. I love it! Whereas allrecipes.com focuses on recipes, Rouxbe focuses on skills & methods. Just as AllRecipes has cooking videos as well, Rouxbe also has recipes. These two sites really complement each other.  I'm a better cook thanks to them both! MORE
