Mini Cheesecakes I

I made these for a baby shower and they tasted pretty good. I made half of them chocolate by melting some chocolate chips in a double boiler and adding them to the mixture. I used chocolate graham crackers as the crust for the chocolate cheesecakes. They were well received, but I think that the cream cheese needs to be brought to room temperature before making this recipe. My cold cream cheese didn't fully incorporate and it ended up looking like little lumps of cottage cheese when you bit into them.

Russian Tea Cakes I

These cookies are VERY time consuming! I made a double batch for a baby shower and found myself wishing I'd made something else. The taste was just okay. But - 2 of my friends did say they were great.

Grandma Johnson's Scones

I made these scones for a baby shower. They were my 1st ever attempt at scone making and I was a bit worried as I am not a very seasoned cook. These scones were surprisingly easy to make and were delicious to boot! I made half with currants and half with milk chocolate chips. I kept them in a ziploc baggie for a day before the shower. They were soft, buttery, and the best tasting scones I've ever had! I will definitely make them again - thanks for making me look like a pro!

Luscious Slush Punch

I made this punch for a baby shower, which was a big move for me because I am a HUGE sherbet punch fan & would normally make that, but I was attracted to the slush element. I froze my gelatin mixture in ziploc freezer bags for approx. 20 hours. The mixture was the perfect consistency and easily turned to a perfect slush. I used about 1 1/2 cups sugar, but I think it could have been sweeter, next time I'll try 2 cups. Also, the taste was just a tad bland to me - next time I will try gingerale instead of lemon-lime to give it a little more kick. But I would definitely make this again because the slush is just so fun!
