Apple Strudel Muffins
After reading several of the reviews, I made the changes suggested by TUNISIANSWIFE (1C shredded apple, 1/2 chopped, half and half brown and white sugar). In addition, I used pumpkin spice in the batter and added some caramel (7 oz. caramel candies and 2T heavy cream heated together - I put this into a squeeze bottle and was able to "inject" caramel into the muffins easily and without mess!). These muffins are very moist and flavorful. I think if I really liked apple baked goods, this would have gotten 5 stars. Perhaps I should have waited to review until I heard back from the teachers at my daughters school? This recipe made 48 mini muffins.

Main Line Chicken Chili
This was a great chili to come home to after sitting out watching soccer in the cold. I used a rotisserie cooked chicken from the store for ease of prep, Cuban black beans and Rotel diced tomatoes with green chilies. Garnished with pepper jack/cheddar cheese blend and avocado... I was in a rush and forgot to add the spices, but that turned out for the best since it was plenty spicy with the cheese, beans and tomato spices. Two adults, a 12 year old and an 8 year old rated this a 4-5 star recipe :)

Delicious Ham and Potato Soup
If you're looking for a hearty, yummy soup, this is it. In order to incorporate the flavors into the potatos more, I cooked the ham in the pot then allowed the ham and chicken bouillan to boil (and I added garlic) for about 10 minutes, THEN put the potatos in for the 15... I didn't bite into a potato thinking, "That's a potato" it really soaked up theessence of the broth. And, for those of you who like a creamier taste but can't have the fat, try fat free half and half... it's WONDERFUL. A low fat chicken sausage is also a nice addition or alternative to the ham. Thanks for the recipe!
