Green Bean and Feta Salad

Very good. I leave the beans whole and omit the feta. We eat the beans like french fries next to a sandwich or burger. Dressing is tasty. There was a good bit of dressing left over and I reused it on another batch that were just as good. Have also substitued balsamic vinegar for the apple cider vinegar with positive results. My new favorite way to eat green beans.

Chocolate Fudge Pound Cake

Good chocolate flavor. Didn't hold together well. Family didn't appreciate that the frosting was inside and needed frosting on top too. Won't be making again.

Hummus III

I saved the liquid drained from the beans and used it to thin out the hummus a little. Delicious flavor. Easy to make.

Banana-Oatmeal Bread

Fantastic! I made a double batch without problems. Next time I'd substitute 1/2 of the oil with applesauce. Otherwise no changes. It was gobbled up.

Hearty Tuna Casserole

This is a keeper! Delicious! Nice change from the old mushroom soup Tuna Noodle Casserole. I always think it's funny when someone raves about a recipe and then tells you all the ways they changed it. Well... here are my changes. Mushrooms for Zuchinni (I'll try Zucchini next time, just didn't have any) and Nonfat Yogurt for the Sour Cream (I'll probably use the yogurt again to decrease fat content). I used about 12 oz of pasta because that was what was in the bag.

To Die For Blueberry Muffins

Delicious Flavor. Easy to make. Gorgeous. I made 3 batches of batter for 24 muffins - 2 full pans. Just 2 batches of crumb topping was more than enough. A Keeper!!

Savory Breakfast Muffins

Great muffins. I did some modifications. I replaced the oil with applesauce and cut the sugar in half. Also used chopped ham on hand instead of bacon. Delcious savory muffins. A definite keeper.
