Turkey Meatloaf Burgers

This is really the BEST turkey burger I have ever had!!! I cut the rcipe in half and still have enough for 6 decent sized burgers. I use PAM instead of the oil and only about 1/4 cup of bread crumbs (even whwn cutting in half) and these are still AMAZING!!! I have even used pineapple preserves when I did not have applesauce. I also add in a 1/4 tsp of cayanne and cumin for an extra kick! We have these at least once a week!!!

Eggplant Parmesan

Very delicious! I also used canned tomatoes as I did not have fresh on hand. Thinking of making again this week but with the fresh tomato. Make sure to cut the eggplant thick enough. I also suggest using large eggplant. I only had enough for one layer but it really didn't matter.

Aunt Carol's Spinach and Fish Bake

Really good!! The spinach portion is like a stuffing, but more healthy. I pesonally would not use cod again cause I don't care for it. Would be great with flounder or tilapia. Also, I don't even think you need the breadcrumbs on top--just trying to think of ways to reduce calories/carbs! I used fresh grated parm cheese in the stuffing along with chopped garlic and a bunch of spices and used Cheddar on the top of the fish. Cooked at 350 for about a half hour and it was perfect!

Wilted Spinach

This recipe was pretty good. I would make it again. This will only make enough for 1.5 people though. I doubled the spinach and halfed the rest of the ingredients. I also added some feta.

Kielbasa and Potato Bake

Very delicious!! I used celery soup. My only complaint is that it was kind of salty. Next time i will use reduced sodium soup and kielbasa. Also, it was a little soupy. I would recommend letting it sit a while or using only one cup of milk. All in all very tasty! I will definitely make again! Thanks!

Hearty Vegetable Lasagna

Delicious!!! I actually only used nine lasagna noodles. I added one zuccini chopped and only a 1.5 jars of sauce which was more than enough. I also only only added one cup of cheese on top. Looking forward to making this again. Will add even more veggies next time!

Baked Macaroni and Cheese

I am so glad i found this recipe! It IS just like my Grandmom's!! I love it!! I used a whole lb of elbows. Just added a little extra milk, 4 cups of chesse, 3 tbs of butter but only the one egg. Also added extra spices-paprika and garlic powder--soooo good! Other than that I made it exactly as written.
