Grandma Johnson's Scones

Love this recipe! I use 1 1/2 cup of frozen blueberries instead of raisins in mine (work quickly once you get the blueberries in or your scones will be a nice purple colour!). I agree with some other reviewers that the cook time is at least 10 minutes longer than the recipe says...so much of that depends on thickness, etc, and the fact that I put frozen fruit inside. Regardless, this is a recipe I always make for brunches and company. I love it!

Vegetarian Korma

Oh my.....this was delicious! I doubled the ginger and useddried red chiles since I didn't have a jalapeno pepper. Awesome!! The cooking time was much longer than the recipe calls for, but well worth the wait. Yummmm.....

Apple Walnut Salad with Cranberry Vinaigrette

Delicious recipe! Be sure to add the dressing gradually to the greens; I had way more dressing that I needed and it would have been overpowering if I used it all at once. The walnuts finish it off beautifully.

Iced Pumpkin Cookies

Sooooo delicious! I made the cookies smaller and got 4 dozen; remember to bake for less time if you do the same. When they first come out of the oven, they feel like they will be crunchy and the spiciness is hard to taste, but give it time....after being in an air tight container overnight they soften right up and the flavour pops. I will make these again and again and again...

Quinoa and Black Beans

Absolutely delicious! I added a drained can of stewed tomatoes as some reviewers suggested and added spice to taste, making it much spicier. So versatile and easy to make with whatever you have in the house. I loved this recipe and will make it again and again.

Fudge Drops

Evaporated milk is generally sold in a 12oz can...is that what this recipe is supposed to be? 5oz was entirely not enough milk and the fudge turned out crumbly. Or I should have mixed it more gradually...not exactly sure what the problem was!

Spinach Corn Muffins

These muffins turned out well. They are a bit dense but pack a healthy punch with the spinach. I added some dried chiles to up the spicy factor, which worked well. I also only had marble cheese in the house; I think plain cheddar would have been better for more flavour. I will make these again!

Mexican Bean Salad

Such a great recipe! I used chickpeas as well as red kidney beans and white beans, each a 19 oz can. I used half of the oil/vinegar that was called for and it was still plenty for the amount of beans. I only had yellow onions in the house but the taste still works. I used more lime juice and hot sauce for more kick, and doubled the cumin. Absolutely delicious!

Cool Cucumber Salsa

This salsa is the best I have ever eaten! My partner and I are huge salsa fans, and both of us agree that this has the best flavour and is very addictive. I added more tomato and fresh dill and it turned out perfectly.
