Grilled Tofu Skewers with Sriracha Sauce

The marinade was delicious, but the tofu didn't stay on the skewers. we had to do them separately on tin foil.

Rudy's Garlic Scape Pesto

Whole Wheat Zucchini Bread

We love this recipe. The honey and brown sugar are such a nice addition. The first time, I followed the recipe, but did some in muffin tins for about 10 min. Delicious! The second time, I did try half white and half wheat flour and it came out a little dry. Next time, I'll add a little more oil, zucchini, or some apple sauce to compensate.

Spicy Tuna Fish Cakes

Very good! The whole family liked it. I do wish it had a little more tuna flavor, but I loved the texture of the potato with the fish. I imagine you could substitute cooked, chopped chicken or other meats for the fish. I did make a few changes. I used minced garlic instead of powder and sweet and spicy garlic festival mustard instead of dijon. I also omitted the cayenne because my 2 year old is sensitive to spicy foods. For the adults, I served it with a miracle whip, mustard, and hot sauce dipping sauce.

Chicken Vegetable Potpie

As suggested by other reviewers, I cooked the veggies in broth. For seasoning, I added thyme, parsley, a little bit of paprika and salt and pepper. I also used 98% fat free cream of mushroom in the place of cream of chicken, so I added a tablespoon of butter for a little extra fat.

Best Peanut Butter Cookies Ever

I made these with natural peanut butter and 1 C white sugar and 1 C brown sugar. They were perfect! Don't forget to grease your baking sheets well for these.

The kids found them a little too "spicy" even with the hot sauce and peppers removed, but the grown ups love them! I'll keep making them and the kids will get used to the flavors.
