Cinnamon Roasted Sweet Potatoes

This was wonderful. I reduced the oil to 2 T. canola oil, and I left the skins on the sweet potatoes so I didn't miss all of the great nutrients sweet potatoes have to offer :) For the leftovers, I added them to my salads during the workweek - it was a nice way to spice up the usual old boring salad.

Banana Sour Cream Bread

There are lots of banana bread recipes, but the best ones make sure the bread is moist. This was FINALLY my first successful attempt at a moist and delicious banana bread. I halved the recipe and used one of the pans that make 4 mini-loaves. I started watching the bread after 40 minutes, and pulled it out around 45-50 minutes (toothpick came out clean). I used Tillamook fat-free sour cream, and dusted the tops with confectioners' sugar. Even though I used fat-free sour cream, the loaves came out really moist. I brought a loaf to work, and it was gone in 1/2 hour. Great recipe!!

Spicy Three Pepper Hummus

Great base recipe! I cut the recipe in half and added some dried cilantro flakes as well. I added 7-8 jalapeno slices (round ones) and yes it had some kick. Also I used a garlic press for the garlic, and just threw everything into my food processor. Then I sprinkled paprika over the top to make it look pretty. Awesome recipe - I will definitely make again. Overall it's much cheaper to make on your own, not to mention it being more fresh.

Stuffed Jalapenos III

I made these for a birthday party - they were gone in minutes! Out of all the appetizers I made, these were the hit. They are quick and easy to make, and delicious. I have incorporated this recipe into my list of favorite appetizers. I thought they might be too hot being fresh jalapenos, but they had a mild spice (due to the cooking?) that was perfect for my tastes.

Downeast Maine Pumpkin Bread

This was an absolutely fabulous recipe. The bread was delicously moist, and I didn't have to make any adjustments. I believe the loaf I brought to work lasted less than an hour and several people asked me for the recipe and I told them I found it here! It's made it into my recipe box where I put my tried and truely delicious recipes only.

World's Best Lasagna

It's replaced my standard lasagne recipe - this dish was great!! As always, I did some personal tweaking where I used 1# hot italian sausage to add spice, and omitted the 3/4# ground beef and replaced with 2 c. sliced mushrooms. I also used a full pound of mozzarella instead of 3/4#. The recipe made plenty of sauce, in fact we had a cup or two left over that should be great over pasta. The lasagne overall was nice and firm - not soggy or runny, and the top layer had a great crisp to it. To me those are the most important factors so five stars!!

Family-Style French Toast

What a treat! The brown sugar/butter/cinnamon mixture tastes like the gooey inside of a cinnamon roll. Since there are only two of us, I cut the recipe in half and used an 8x8" pan. Also, the night before I had made 2 loaves of french bread using my bread maker to make the dough. Since this is a lot of bread for 2 people, the next-day french toast was a great way to spice up the leftover bread. This recipe worked great and I am definitely going to use this recipe again. It goes very well with a side of bacon.
