Fragrant and Healthy Carrot Cake

This was a very tasty cake! I substituted applesauce for the oil, used all whole wheat flour, and left out the molasses. I also doubled the recipe and used a 9x13 pan. I was worried about overcooking it after reading a review, so kept a close eye on it and took it out after 50 minutes or so. It looked like it might be overdone but ended up a little gooey in the middle. Definitely bake it for the full time.

Sweet and Spicy Sweet Potatoes

Yum! This is really good. I used honey instead of brown sugar just because I ran out of brown sugar. I left the skins on to retain all the nutrients. Also, they took a lot longer to cook than stated in the directions.

Four Cheese Macaroni Casserole

Very good although I didn't use feta because it was too expensive. I also added steamed broccoli and decreased the spices. Very cheesy!

Shrimp Fried Rice II

Pretty tasty! I used quinoa (made ahead of time and refrigerated) instead of rice to make it healthier. I also substituted cabbage, broccoli, and green pepper instead of bean sprouts just because it's what I had. I think it needs more shrimp than called for and maybe another egg.

Quinoa and Black Beans

I made this exactly except I added diced red pepper and did half black beans and half pinto beans. I thought it was pretty gross. I ate some of it because it is healthy and filling, but I couldn't eat much.

Baked Asparagus with Balsamic Butter Sauce

I don't understand why this recipe got such good reviews. I made it exactly and it didn't taste disgusting or anything, but it definitely wasn't as good as asparagus with just butter, salt, and pepper. It just tasted like soy sauce.

Smashed Cauliflower

I read the reviews saying it was too runny, but then some said they drained it and it was too dry. So I drained a lot of the broth when the cauliflower was done cooking, but not all of it. I should have drained all of it as it was still a little runny. I thought I could mash it with a fork, but it was pretty hard so a potato masher is a good idea. I used some Greek yogurt instead of butter and vegetable broth instead of chicken broth. I also added chives. Overall pretty good. Tasted better leftover the next day actually.

Rhubarb-Raspberry Crunch

Pretty good, a little too sweet and the crust didn't get crisp enough. I think it had too much butter, I used half a cup like the recipe said but it didn't ever look like pea-sized crumbles. More like buttery goo. It also took longer to cook. Still pretty tasty though.

Thai Red Chicken Curry

Great recipe for basic curry. However, all of the flavor comes from the curry paste, which is very spicy, so to add more flavor you must add more heat. It needs other seasonings such as brown sugar and soy sauce to correct this as other people have mentioned. Also, I use fried tofu in this recipe and whatever vegetables I have on hand or feel like.

Krissy's Easy Chocolate Triple Layer Pie

Very good, I used a regular pie crust instead of graham cracker and mixed some candy bar chunks into the second layer. It is a very fluffy and flimsy, I was hoping for a firmer texture. I tried freezing it, but it got too hard.

Spicy Indian Chicken and Mango Curry

Chewy Chocolate Chip Oatmeal Cookies

I really love flat cookies (vs. fluffy) and that's what I was hoping for with this recipe. Mine didn't turn out flat at all, but they were pretty delicious and the chewy texture was great. They got rave reviews from my coworkers.

Baked Tofu Bites

Pretty good. I added more hot sauce and maple syrup than called for. A lot of reviewers said to leave out the liquid smoke, but I LOVE liquid smoke. Makes everything taste like bacon--what's not to like?

Vegetarian Korma

This recipe was ok, but definitely nothing like the korma I've had in restaurants. Like others have said, you have to precook the potatoes. I also had to add a lot of spice. Made it according to directions, but it seemed pretty bland and not very spicy. So I added quite a bit more curry powder, cayenne, and chili flakes. Overall I'm kind of disappointed after all the great reviews.

Zucchini Cornbread Casserole

Very yummy, tastes just like corn casserole with zucchini. I doubled it and thought it looked like way too much zucchini for the cornbread batter. However, when it cooked the zucchini shrank and the cornbread expanded, turning out perfect. I did cook it for an extra 30 min or so. I took other's advice and added the cheese on top at the end. I used one onion and one leek, plus added a diced red pepper. I also cut the zucchini into small pieces instead of shredding it. For the cheese I used half extra sharp cheddar and half smoked fontina.

Country Apple Dumplings

Delicious and easy! I was just cooking for me so I reduced the amounts, and I pretty much just guesstimated. So this recipe is very forgiving. I used Diet Mountain Dew and reduced fat crescent rolls. And I put way more apple in each dumpling than directed.
